Mexico chicken Tinga tostadas. American translation Chicken Chipotle peppers tostadas.
Not homemade butter chicken and with peas on the side. But still really good. Because the closest Indian restaurant is an hour and a half away. So you improvise.
Spatchcock a chicken with vegetables Brussels sprouts, carrots, potatoes and onions.
Cottage cheese eggs quiche. The crust is flour tortillas.
Preheat oven at 350
Pie pan sprayed with pam spray
Cover a pie pan with 2 to 3 flour tortillas.
In a bowl mix
10 oz of cottage Cheese
2 eggs
Chopped bacon or we used ham.
We used for vegetables jalapeno, orange bell peppers and Chopped onions.
Add 2 tablespoons of parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, salt and pepper. I also added dried cilantro.
Mix and add to top of tortillas. Bake for 40 to 45 minutes. Take out and add your favorite cheese toppings. We used mozzarella and cheddar and put the quiche back in the oven for 10 more minutes. Take out and let cool for 10 minutes. Easy and yummy.
Hormel ham, baked carrots, mashed potatoes and gravy and our garden green beans that my mother in law dehydrated and froze for us.
You can't go wrong with jalapeno cornbread, collard greens and ground pork farm raised shepherds pie.

Tempura batter Garden Zucchini and shrimp.

Homemade sushi rolls. Garden vegetables and home raised pork. Jalapeno, carrot, zucchini, cabbage, onions and cooked ground pork. Taste like a egg roll sushi.
Ground pork green sauce and cheese baked burritos.
Fried Morel mushrooms, grilled brats, onions on a pretzel bun and of course a salad. Pumpkin squares with walnuts.
My favorite.
Was in a muffin mood. Both made from Pancake mix. Pumpkin-Pancake walnut and berries-dark chocolate muffins. Both are really good.
Sausage dip, Gaucamol dip, pizza and chips...all homemade.
Homemade pickle soup with ham.
Made easy cake box cookies. The pink are strawberry and the green vanilla with food coloring... 2 eggs, one box of your favorite cake mix and either a full sick of real butter or a half cup of canola oil. I prefer butter. You can be creative. Add anything. M&M, peanut, extra vanilla, lemon juice to lemon cookies.
Leftover Turkey pot pie. I freeze the Leftover turkey meat and the fat from the bottom of the pan to make this. Carrots, potatoes, celery, onion and peas plus turkey. Crust is homemade and I put grind pepper in my dough.
Easy sticky rice with carrots, onions and peas, chicken broth or you can use 2 chicken bullion cubes. Great side dish Easy to make.
Typical Thanksgiving meal. Turkey, green bean casserole, corn, mashed potatoes and homemade gravy, stuffing. Can crescent rolls.
Homemade sweet potato fries and meatball hot subs.
When you are Polish and proud to make homemade Pierogi. Garden cabbage and wild mushrooms Pierogi. Made them in August and I freeze them for the winter. Boil first, then fry in any combination you want. Onions, garlic, bacon, peppers or just be creative. Yes mama.
