Times are crazy BUT we still have to eat. Here's a quick snack I make when I want something sweet (but like, ice cream isn't in the house).

Date Blobs (or bars)

Ingredients:
-Dates ~1.5 cups, or enough that the "dough" kind of sticks together
-Some kind of nut ~1 cup (I like cheapo walnuts but cashews are 👌)
-Optional add-ins like 1/4 cup of chia seeds, sunflower seeds, 1/2 tsp of cinnamon or ginger or pumpkin spice, or a 6-10 drops of an edible essential oil like lemon or orange

Directions:
1. Put it all in a food processor and process until it becomes a crumbly "dough". Add more dates for stickier dough.
2. Roll into bite-sized blobs.
You can also make bars by lining a container with parchment paper, throwing in the dough, and pressing it into the container until very firm. Put it in the fridge for an hour, then cut into bars. Store the bars individually separated by parchment paper squares.
3. Blobs and bars will keep for 10-14 days in the fridge, or ~1 week out.
