Orientation flew by so fast 💨 I traded in my business casual clothes for scrubs this week as I started my clinical rotation (enjoy the mirror selfie)! It’s getting real folks!
Officially touched down in the DMV & got an opportunity to volunteer at Beet Street Garden with some cool peeps from the DC Vegans of Color group & 🌱✨ Look at how beautiful this garden was! I even got a little bit of lavender to take home with me
That 🫐 + lavender + 🍋 combination is something dangerous. Tried out a vegan lemon bun and blueberry lavender latte at ! So glad I don’t live closer or they would take all my money 😅
☀️ ☀️The food this weekend was amazing…from the Thai Hot Pot to the Blueberry Muffin Matcha to the all the yummy food I ate at the (food that was so good I forgot to snap pictures first) S/O to for holding it down with the vegan options 🌱✨
I have a bad habit of holding on to good news for the perfect moment and then never sharing anything at all. That ends today! I am happy to announce that I matched into my top choice for my dietetic internship with University of Maryland College Park! Just another step closer on my journey to becoming a Registered Dietitian 🍾✨I’m grateful to all of the friends, family, and professors who encouraged me along the way!

☀️ ☀️ Switched out my daily smoothie for tofu scramble this morning. I topped it with some bbq mushrooms and served the scramble over a quick homemade dumpling that I made after realizing my bread loaf was moldy 🥲 This was a pretty hearty breakfast 🌱
☀️ ☀️ I loved hanging out with my family a few Sundays ago in This was definitely the perfect brunch spot for both non-vegans and vegans to meet! Everyone loved their food! Altogether we had vegan chicken & waffles, Cesar salad, breakfast burrito, sweet Thai cauliflower and cinnamon rolls 😋 what’s your favorite brunch item?

Vegan Vanilla Spice Cake — Welcome To Eating With CJ Can you believe that after being vegan for two years, I had never had my own birthday cake? I decided to take matters into my own hand and bake my own cake.
☀️ ☀️ This year I had no idea how I would celebrate my birthday. My birthday was pretty peaceful. There was no big party. There were errands to get done and laundry to do. I ended my birthday with dinner in a park. It was peaceful. My birthday may not have been exactly what I wanted, but it was everything I needed. I could say the same thing about year 23 as a whole. It wasn’t a glamorous year, but I hit so many milestones. I can’t be anything but grateful, and I’m looking forward to what story will be written in Chapter 24 ✨
