Keto Raspberry Shortcake

Was craving something sweet so bad so I made this… Raspberry Shortcake… used cloudies cloud bread with homemade whipped cream (heavy cream, liquid allulose and vanilla extract) and 1/3 cup organic raspberries. My sweet for the day. 🤤 this was so good!

Wow! These cauliflower sandwich things were surprisingly REALLY GOOD… and they’re really clean! I’m buying like three more packs next time I go to Costco and freezing them (if they’re still available.) my new go-to for tacos, avocado toast and even use them for something sweet. Love them! My new staple!

Also, this is my breakfast after a 16.5 hour fast.

Eggs with (cloudbread), avocado with h**p hearts and EBTB seasoning, and chicken basil and black pepper sausage. (Super clean and so tasty!) this was a very filling meal overall.

Dinner before a fast: Homemade air fried chicken wings with homemade creamed spinach and a chopped salad with creamy Italian dressing.

Meal prepped Sausage Egg and Cheese Burrito (with sautéed kale and onions throw in in) rolled in a carb balance low carb wrap. I made 11 and froze them. All I gotta do is take them out, wrap them in a damp paper towel and microwave for 90 seconds when I want one. They came out delish and froze wonderfully, not wet nor soggy nor rubbery eggs.

Tips:
- For non-rubbery eggs: add in 1/4 cup of heavy cream to 8 eggs before cooking a big batch of this.

- for non-watery eggs: add your salt in right before it’s done cooking.

- for non-watery sausage/meat: Cook the meat together as one slab before breaking it up into pieces. This will reduce the amount of water the excrete and will allow the meat to brown. Once brown you can break it up.

Chicken enchiladas with vegetable melange.

Short on time? Keep these two staples in the freezer at all times and just pop them in the microwave or air fryer and you’re good to go for perfectly rounded keto meal.

Two chicken enchiladas with a side of fire roasted vegetable melange, featuring veggies such as Brussels sprouts, red and yellow bell peppers, red onion, and mushrooms with Himalayan pink salt and black peppercorn.

Broke a 17 hr fast with this…
2 savory chaffles (1 egg, 1/3 cup sharp white cheddar, 2 tbsp of almond flour and pinch of salt.)

One with: garlic and herb goat cheese with 1 grilled slice of ham, half small avocado, h**p hearts and a sq**rt of lemon juice.

The other with: one half small avocado, fried egg and h**p hearts.

All the fat you need and super low carb!

Chia Pudding

Standard: (tastes like rice pudding on its own)
- 1/4 cup of almond milk
- 1 tbsp heavy cream
- 2 tbsp chia seeds
- 1 tbsp sweetener
- 1/4 tsp vanilla extract
- 1/4 tsp cinnamon powder (or to taste)

**For a chocolate version add 1 tsp of unsweetened cocoa powder.

Add all ingredients in a small container with lid and shake well. Leave to set for 2 hours or overnight. Top with your choice of keto approved toppings: nuts, berries, sf chocolate, whipped cream, peanut butter, etc.

This legit tastes 🔥

Keto Shrimp Scampi with angel hair noodles and brocolli tossed in.

This recipe is super simple to make if you just add in garlic butter shrimp, which I picked up at Costco. For a more tangy taste I added in the juice and zest of a lemon to the overall batch. Toss in your Palmini noodles to sauce and add your vegetable of choice and voila!

Non fasting day: decided to make sweet chaffles for breakfast. There came out🔥 and contain 2 eggs and 3.5g net carbs for all four.

My recipe for 2 sweet chaffles:
- 1 egg
- 1/4 cup of shredded mozzarella cheese
- 2 tbsp almond flour
- 1 tsbp granulated sweetener ()
- pinch of salt
- 1/4 tsp cinnamon

Mix well. Put half the batter into a single waffle maker at a time. Top with butter and sugarfree syrup of choice. I used maple syrup.

Easy meatball sandwich with side of pork rinds for lunch.

This is an easy keto meal to have during a busy day, on the go or take to work. Just prep and freeze a big batch of keto meatballs ahead of time and cook some up in the air fryer to have on hand in the fridge for a few days. I chose to put 4 meatballs with some white sharp cheddar cheese and BBQ sauce in between two slices of keto break from Costco. It’s tasty, it’s easy and super low carb and high fat!

Keto Thai Coconut Chicken Soup 🤤

So I just winged this recipe and didn’t write down the exact recipe but its Indian and Thai inspired and features ingredients like cabbage, onions, red peppers, tomatoes, chicken broth, diced chicken breast, garlic, lime, turmeric, ginger, ancho chile, coconut milk and cardamom, with a smidge of chili pepper flakes for a subtle kick and a hint of stevia to cut the heat with the sweet. So good my hubby went back for a second bowl. 🤤

Breakfast this morning was smoked sockeye salmon and cream cheese on keto toast topped with avocado, h**p hearts and lemon juice + one avocado toast with 1 cherry tomato, h**p hearts and lemon. So delish! Worth it! 🤤…5g net carbs in total… and so much good fat!

My homemade keto lasagna!

Make it your own by taking any traditional lasagna recipe, fix it up however you like, just be sure to use a low carb pasta sauce or marinara such as or , and low carb lasagna sheets such as hearts of palm lasagna sheets.

Tip for extra flavor:
- try it with breakfast sausage instead of ground beef.
- add 1/2 tbsp of fennel seeds to your bolognese, it elevates the dish!

Depending on the sauce 1/6 of a pasta comes to about 6-7g net carbs. Combine with one roll of my keto garlic rolls and you have a 10g net carb INDULGENT meal that closely compres to the real thing! Enjoy!

Ingredients:
1 1/2 cups part skim low moisture shredded mozzarella cheese
2 oz full fat cream cheese
1 1/3 cups super fine almond flour
2 tbsp coconut flour
1 1/2 tbsp aluminum free double acting baking powder
1 tsp garlic powder
2 large eggs
1/2 cup parmesan crumbs see note

Garlic topping:
3 cloves garlic minced
1 ½ tbsp olive oil
1 ½ tbsp butter
1 tsp finely chopped parsley

Blueberry chocolate chip pancakes.

I made a big batch cuz it was for my husband and I so you would easy get 8 pancakes out of this recipe.

- 1 cup almond flour
- 1/3 cup coconut flour
- 2 tbsp granulated sweetener (truvia, swerve or lakanto, etc.)
- 1 tsp baking powder
- 5 eggs
- 2 tsp vanilla extract
- 1/3 cup nut milk
- 1/3 cup avocado oil
- 1/4 tsp salt

Add-Ins:
- frozen blueberries (about 6-7 per pancake)
- chocolate chips

Just mix all ingredients together fry in some butter. Add in frozen blueberries or whatever else you’d like. Flip over. Top with butter and pair with low carb sugar free syrup. I used zero maple syrup.

This is all very versatile. I can pair any of this with cauliflower rice or mash. I can make a keto lasagna with palmini pasta or linguini or sloppy joes with cloudbread with the bolognese. Top a salad with the chicken or make a “gyro” with the cucumber salad on a low carb wrap. Make Philly cheesesteak fajitas or quesadillas with low carb wraps. …Options are endless.
