Did you know we produce the only Vernaccia grown in the US? Last night we did a beautiful blind comparative tasting with this 2014 Mareterra Riserva Vernaccia di San Gimignano from Casa Lucii. This older Italian wine had so many aromas, you could never fit it into any one box — it started with vertical tart pear and lemon and then immediately went into chamomile, tea leaves, caramel and bitter almond. It’s texture was waxy in your mouth and yet the crisp acid made each sip refreshing.

Of course, we were once again humbled by Dan’s ability to make a wine that allows the character of the grape to shine. These younger vintages of our own were full of primary characteristics and yet the promise of what will unfold with time was also tangible.

It’s not to say Vernaccia gets *better* over time (because it is more than enjoyable when young); but it’s evolution is interesting enough to make sure you’ve got a bottle tucked away for a later date…

Our 2021 vintage is currently available to our wine club members (you can join us at www.danielwines.com/join). The 2022 was just bottled and will be put away for some brief bottle ageing before we release it to our club next year.

What a week! 😱

Nothing a little Daniel Chardonnay can’t fix. We love this variety because as a grape, it’s pretty neutral. That means it will be wildly expressive of where it comes from (this one is from Los Carneros) and how it was made. And we all know that under Dan’s watch, wine becomes liquid gold 🙌

Celebrating with sunshine, loved ones and the best pink drink we can get our hands on.

This year’s Daniel Renaissance Rosé is 100% pinot noir, produced with carbonic maceration, and fermented in neutral oak with indigenous yeast. Expect bright acidity, lively red fruit and touch of cherry.

With this in hand, the future is bright and pink. Can we pour you a glass? 🌸

When you have to look nice for a wine pouring, but you also have to stop at the winery for punchdowns on the way... Cap management with a side of fashion! 😜💁🏻‍♀️

Our 2020 Syrah is smelling phenomenal! It’s been quite the eventful harvest, but with at the helm, everything is coming along quite nicely and smoke-taint free. We’re excited to share what we’ve been up to!

PSA for all you pizza lovers (so, everyone?): We just discovered that 2019 DANIEL Sauvignon Blanc is the PERFECT pizza pairing! It’s unctuous with a heady mid-palate that chews through the pizza just as fast as we do. We love all things Italian, so made this in that style — high elevation SB, barrel fermented, indigenous all the way.

We weren’t expecting such serendipity tonight, so we didn’t take any glamour shots of the two together. But here’s our almost empty bottle with our almost finished homemade pizza (and a glamour shot of the latter for good measure). Link in bio to test this out for yourself!

During quarantine, we’ve been doing a lot of “bringing Italy to us.” This recipe for Coniglio Fritto con Carciofi (fried rabbit with artichokes) is directly from Barbara’s cousins in Tuscany and each savory bite begged for a glass of Vernaccia. We happened to have about a dozen squash blossoms in the garden, so we added those, too because “fioretti” are always a good idea. We cleaned this entire plate (no, really) so we figured we‘d share the recipe (serves 4)!

1 rabbit, butchered
8 marinated artichoke hearts
12 squash blossoms
White wine (unoaked)
Lemon zest
2 gloves crushed garlic
Bay leaf
1/4 cup Dijon mustard
3 tbsp olive oil
1 sprig of rosemary, chopped
2 tbsp oregano, chopped
3 tbsp thyme, chopped
A/P flour
2 eggs
1/4 cup sparkling water
A whole lotta frying oil (we used 30 weight utility oil — the best)
Salt & pepper to taste

A day prior, place the rabbit in a stock pot, and pour in a bottle of white wine (make sure the rabbit is totally submerged, add water if needed). Add the garlic, two shaves of lemon zest and the Bay Leaf. Bring the liquid to a boil, then drop down to a simmer for 20 minutes. Remove pot from heat and let the rabbit cool to room temp in the liquid.

Meanwhile, prepare a marinade with Dijon mustard, 2 tbsp olive oil, rosemary, thyme and oregano.

Once cooled, drain the rabbit (discard the liquid), pat it dry and lightly salt and pepper both sides. Coat all pieces in the marinade and let sit for 24 hours.

Day-of, drain the artichoke hearts from their liquid. Tear the squash blossom in half so they can lay flat in the oil.

Start heating your oil in a Dutch oven or cast iron skillet (you’ll want to get it to 350 degrees for frying.)

Beat the eggs well and add in the sparkling water, salt and pepper.

Prepare a healthy mound of flour (you may need to replenish as time goes on).

Dredge the rabbit, artichoke and blossoms in the egg and then coat them well on both sides with flour.

Without crowding, set the meat and veggies in the oil and fry on each side until golden brown. Pull off and drain on a cooling rack.

Serve with fried sage and lemon wedges.

Did you guys enjoy our chat with ? When it comes to curating wine selections, she is the 🔝. She has consulted on at least 60% of our personal wine cellar and nails it every time. The last time we were at her restaurant, she found one bottle to pair with one person’s grilled octopus, another’s crispy pork belly and yet another’s asparagus (maybe the hardest of all wine pairings?!). As you can imagine, her restaurant is closed right now and her position is furloughed, but she’s still using her time to be of service to other people. She is offering her sommelier services—recommendations, cellar advice, tasting note writing, question answering—in exchange for a donation to Undocufund SF.
