What’s Dark Chocolate? Is it Vegan?

🍫 The purest dark chocolate can be made only with cacao nibs and is called 100% Dark Chocolate
= 100% cacao nibs grounded until a soft paste is formed (is a very complex process but let’s resume it for now 😉)
🍯 Sweet dark chocolates
= cacao nibs + sugar + cacao butter *🤓

👩‍🍳Process:
To keep it simple for now, the process is similar to Peanut butter because Cacao Nibs and Peanuts have very similar fat % (more or less 50%)

⚙️ Industrial dark chocolates:
Need to add other ingredients to make the product more stable to temperature changes, improve/hide cheap cacao nibs's flavor, standardize the flavor, and substitute cacao butter for vegetable fat to lower the cost.

👉🌱 Is dark chocolate dairy free/vegan?
Yes, all dark chocolates are, by concept, free of animal products.

*🤓Why cacao butter is added in some cases to dark chocolate?
Sugar absorbs moisture and makes chocolate thicker: chocolates w/ higher % of caca0 = greater fluidity
Cacao butter % in the cacao nibs can vary depending on the origin, cacao variety, and harvest season.

Almost at the end of the Saturday we started talking about chocolate and ended talking about veganism, food, nutrition and all things food. Thanks so much for stopping by!

It all started in a sugary mountain

12 years ago, Mary was studying pastries and chocolate confections and for years after that, she crafted delicious mousses, macarons, napoleons, eclairs, and Rochers... oohhh the Rochers... with all kinds of delicious ingredients like creams, puffed pastries, ganaches, chocolate in all deliciously sweet grandiousness.

Chocolate has always been a big part in this play, after all, she started doing chocolate inside Picacho, her family shop, in the beautiful mountains of Caracas helping her mom open the gates to magical elves who love sharing the best cacao in the world to curious visitors in forms like golden chocolate covered rocks and heart-shaped surprises.

Almost 3 years ago while working on creating Rochers (ooohhh... the Rochers) both children came to the kitchen site to see Mami work. They ate some chocolates but were careful not to eat too much. Mary: “Just 2, OK?” — Kids: “OK. Just 2”. But, why? Why if chocolate is a plant, and very rich in nutrients, we’re not giving them more? The short answer: Refined sugars.

Then, it all started to make sense. Mary loves chocolate, knows chocolate, craves chocolate, and loves chocolate (yeah, that much!) and she knew it has a lot of benefits and the only reason not to give it to her children was all the additives like lecithin, refined sugar, and preservatives to ensure chocolate-based products last longer on a shelf.
