1. What are Microgreens? microgreens are tiny herbs or vegetables harvested right after the true leaves have developed, not to be confused with sprouts.  They may contain up to 40% more nutritional value compared to full-grown vegetables.

Qué son los Microgreens? Los microgreens son pequeñas hierbas o vegetales que se cosechan justo después de que se hayan desarrollado las hojas verdaderas Pueden contener hasta un 40 % más de valor nutricional en comparación con las verduras adultas.

2. How can they be used? Microgreens are known to be mostly used as garnishes for food and drinks, but because these tiny greens are nutritional power houses, they can also be used to replace lettuce in sandwiches, tacos, and burgers. We love to use them in smoothies, sauces, salads, juicing, soups, and stir fry.

It has been a long time in the works. We were always somehow putting it on the back burner. Life kept getting in the way, but we were determined to get it done! 💪 We had been doing research for about 3 years. Like I had mentioned before, I've had two back surgeries, gotten several epidurals over the years, done physical therapy, and medications, but nothing seemed to help me. I felt hopeless, and then oneday I bumped into an article about lions mane mushrooms and their medicinal properties. I was in disbelief as to how many health benefits this mushroom has. So, I started my journey on making a dual tincture! 🍄

It's a dual extract, meaning it has 2 parts. The first part consists of soaking the fruiting bodies in grain alcohol to extract the infused liquid from the plant material. The second part is using that same plant material and making a concentrated decoction to extract the full spectrum of compounds. Then, combining the two!

We created a simple & easy delicious meal using one of our ingredients. Pictured above are loaded sweet potato fries with sunflower microgreens 🌻

We made a sauce using cashews, water, nutritional yeast, garlic, jalapeno, cumin, smoked paprika, lime juice, and salt & pepper to taste. So freaking good! 😊
