Tula's is named after my Grandma Tula and the small kitchen that provided sustenance for our bellies and our hearts.
She cooked tasty food from quality ingredients from scratch, and so do we. We create plates without pretense or borders with passion.

Every dish has a story. The Peyton is named after a time, as a young man, when I used to cook and serve a well known athlete and gentleman. He would show up late to Venice and order spaghetti Bolognese consistently until I finally got the courage to approach the table and convince him to call an “audible” and let me style him out.
I had the honor of serving his wife’s birthday dinner, Christmas dinner with his mom and Dad, lunch for the entire O-line before the playoffs as well as doing charity dinners for the Peyback Foundation. He is a better gentleman in person than he was a quarterback, and that’s saying something.
So this sandwich is an ode to the Sheriff and my life experience as a chef being lucky enough to have my craft bring me into the most interesting circles. Like him, it’s the best of its kind. Serving this and many other stories today at the Machine. Bingo starts at 4:00, come on down.

The Wilber started as a spinoff of a BLT and developed into so much more with experience and technique.
We maple brine our bellies for two days then dry the skin for another day before mesquite and applewood smoking them for 8-10 hours.

When I designed the layout of the truck I wanted it to be versatile enough to handle high end catering as well. We literally can transform it to accommodate whatever menu we are serving over night and have it stocked and ready for the core menu the next day.
Learning what equipment works, how to establish flow and how to create negative ( preferably FLAT) space for plating on big events is definitely a trial and error experience. We have optimized it over and over these past few years and will continue to learn how to be more efficient. Proper preparation prevents poor performance. See also, mis en place.

Part of our mission statement when we began four years ago was to support local and get the best ingredients we can. It would be easy just to buy conventional greens but they are such a big part of our plates that we source our mix from Rebel Farm, a local organic urban farm. They hydroponically grow this mix of of mustard greens, pac choi, tatsoi and mizuna and the flavor and texture come through in every bite. We are proud to serve their mix on the truck and many other greens, herbs and micros for our catering as well. It’s little details like these that truly make our plates stand out from normal truck fare. Come get your greens on tonight at publicofferingbrewing from 4-8.
