PROCESSING DATES AVAILABLE DURING DEER SEASON!!! That is correct, we do not stop slaughtering livestock during hunting season. We do however cut back on available appointments, so just like the end of show season, the early bird gets the worm. Make your appointments now, no need to wait for spring time and feed for longer than needed. As always, if you don't have an animal, check the supplier list on the website centraltexasprocessing.com and you will be able to find a great animal to fill your freezer.

Tired of spending a fortune at the grocery store for meat? We have immediate openings available, so this is the perfect time to get an animal butchered. Don't have a steer, pig, lamb, or goat, no problem, call us and we can pair you up with one of our suppliers to find you the perfect animal. Don't have a truck or trailer, no problem, most suppliers will deliver and we can always pick one up as well. Worried about freezer space, find another family to split it with. We will package the animal in two separate halves so there is no confusion when picking up your meat. Never had an animal butchered, also not a problem, we will explain the process and the different ways the the animal can be cut up, so that you get exactly what you want.

With stock show season quickly approaching, if you are planning on having your show animal processed, now is the time to reserve a time slot as reservations are beginning to fill up.
We have a few reservation times left for hogs in February and we have a few time slots left for both cattle and hogs in April..

We have 2 suppliers that have multiple steers available, Diamond KY Cattle CO. (Kody 210-265-9775) has 12 show steers, and NB Beef CO. 832-474-2932 has 3 from their herd. Lead time for processing starts at April 3rd and every week after that is has openings!

Appointments are available...We have increased our weekly livestock capacity to reduce the wait time for an appointment. We have slots available as soon as February 28th.

Now that deer season is winding down, we are going full steam ahead with livestock processing. We have a few spots we can still slip someone in during January, February is filling up fast. We have expanded our weekly capacity to help accommodate everyone's needs.

Due to an excessive number of people booking appointments and then canceling or not showing up for their appointment, we are having to go to a $100.00 per head deposit when booking a processing appointment. The deposit will be refundable up to 1 week before the appointment if you need to reschedule or cancel. This will give us enough time to move someone else into that appointment spot. Appointments canceled within 7 days of the appointment, and no-shows, will not receive a refund.

We will be adding a minimum charge of $450.00 on cattle that are less than 600 pounds live weight.

HOGS: Sold

If you are interested in purchasing a hog for processing, Kelso Genetics (210-265-9658) has four 400 lb hogs that are ready for slaughter. They are asking $150 per hog. If you would like one or more, please contact them at the phone listed above.

This size hog should yield a far amount of meat with large cuts and thick bacon.

When choosing a processor, reservation date availability and the final cost are very important to consider.

Processing reservation backlogs can range from a couple of weeks, if you are really lucky, to many months in underserved areas. To get a reservation that matches your needs, try and estimate when your livestock will be at the maturity level and the weight you want for processing. It is very important to schedule a reservation well before your animal is ready for processing.

The second thing to consider is the final cost. Hitting customers with fees for everything is a common practice used by many a processor. ALWAYS ask for an estimate when making your processing date reservation. The base processing charges used by all processors are for harvesting and processing based on carcass weight. Common fees applied are for such things as cutting stew, grinding, cutting boneless steaks, tenderizing, and even packaging. Yes, even packaging, and I’m not talking about an upcharge for vacuum sealing over paper wrap. Some processors include an additional fee regardless of what type of packaging you choose. So unless you want unpackaged meat, they are going to charge you a packaging fee. It is important to understand upfront what you are going to be charged for before dropping your animal off.

We have tried to make our pricing transparent so there are no shocking surprises when you come to pick up your meat. Again, ALWAYS ALWAYS ALWAYS ask for an estimate of the final cost if you don't understand a processor's price list. Keep in mind that it is just an estimate and may be somewhat different from the final cost but shouldn’t be crazy different. If a processor won’t give you an estimate that should raise a red flag and set off alarm bells that you may be in for a surprise when you go pick up your meat and get the bill.

If you have ever wanted to have livestock processed but didn’t know of a source for cattle or hogs, we have put together a list of local livestock providers. These providers are not associated with CTP and the sale of the animal is between you and them. You are under no obligation to have CTP do the processing.

If you don’t have a way to haul livestock, some of the providers may offer the option to deliver the animal to your choice of processor, or we can put you in touch with an independent hauler who can transport the animal for you. All you would have to do is come get your meat when it's ready.

Hunters for the Hungry - Feeding Texas 16/09/2021

We are an official processor and drop-off location for Hunters for the Hungry. You can drop-off your deer/exotics at our location FREE of charge.

I want to stress; you do not need to pay anything to donate your animals regardless of which Hunters for the Hungry drop-off location you use. If another drop-off location wants to charge you a fee (which they are not supposed to), bring the animal which you wish to donate to our facility instead.

Per Hunters for the Hungry guidelines, to donate an animal, bring your legally tagged, field-dressed wild game to our processing facility. We can accept Axis Deer, Nilgai, Blackbuck, Fallow Deer, Sika Deer, Oryx, White-Tail Deer, and Mule Deer. Due to state and federal health regulations, Hunters for the Hungry is not able to accept donations of feral hogs.

We just completed the Texas Trophy Hunters Extravaganza show in San Antonio. Met a bunch of great people and talked with quite a few hunters and people needing livestock processing who were floored by the taste and quality of the sample products that we had at the show and our upfront, no hidden cost pricing. They were also pleasantly surprised that we are in the San Antonio area and our flexibility for drop-offs and pick-ups.

We also heard from more than a handful that had not been treated so well when getting their wildgame and livestock processed by other processors. I don’t want this to turn into a rant, but we strive to not only give you the highest quality product but also one that you will enjoy at a fair deal. We believe a fair deal is a transaction that is fair for you and fair for us. Some of their experiences were quite shocking while getting their animals processed. I’m not going to go into details but here are some tips to protect yourself when getting an animal processed.

Always ask for a price estimate when you drop your animals off. It will vary some, but the final actual price should not be dramatically different. If the processor is unwilling to do that, then more than likely it is because they have so many hidden charges that they can’t make that estimate. Ask if you are going to get your animal back or do they batch process, even go so far as to ask to tour the facility and verify for yourself. Do they have locker fees and how long do you have to come get your processed meat after being told it's ready? Finally, if you are told something that sounds like complete nonsense, give us a call and ask our opinion (let me tell you, people were told some crazy stuff and ended up spending a lot more than they should have to get their animal(s) processed).

We will be at the Texas Trophy Hunters Extravaganza in San Antonio, August 20 - 22.

Stop by the booth, we will have jerky, buckstix, dried sausage, and summer sausage samples.

Just a follow-up on the Texas Trophy Hunters Extravaganza in Houston we attended last week. We had a large number of people stop by the booth and try the samples we had, they were a big hit. They were pleasantly surprised they have a new option for deer processing because of the easy access from I-10 as they travel to and from their hunting leases and the late in-person dropoff options especially Sunday evenings as they head home. They were also surprised at the no hidden pricing system (many had gotten burned by other places charging for grinding, packaging, tenderizing, and other services that we include with basic processing). The main question was would they get their meat back. The answer to that was an absolute yes, we do not batch process orders like most other places (more on this later).

To help farmers and ranchers create a new outlet for selling livestock, we would like to list you on our website and page. If you are a livestock supplier and are interested in selling to the public, please contact us at (830) 255-7700 or email us at [email protected]. There is no charge for being listed and no obligation to have the livestock processed at our facility. We believe that making it easier for people to purchase livestock will end up benefitting both our industries while helping more people to take back control of their food supply from the big box stores, where price, quality, and availability of meat can be volatile.

The backstory of this effort is that we have come to see that there are people that are interested in having their own animals processed but do not own or know where to purchase livestock. This list will give interested people an easy means of contacting participating livestock suppliers directly to negotiate a sale price, select a grade or breed, and discuss transportation if needed. We are not a middleman in this process and are only interested in bringing potential buyers and sellers together.

We are now taking appointments for custom livestock processing. We can process your cattle, hogs, sheep, and goats. CTP is licensed and inspected through the State of Texas to provide custom livestock processing.

The lack of custom processors and the number of inquiries about processing livestock drove our decision to extend services beyond wildgame processing. The facility was remodeled over the summer to allow us to become a state licensed custom livestock processing facility.

If you are planning to have an animal processed, make your appointment now, even if you aren't planning to have the animal processed until much later in the future. Wait times at some processors can be 6 months to a year or more.

Every animal brought into CTP is individually processed and only that meat is delivered back to its owner. You may think this is an obvious statement but here is a little secret, batch process is common practice. That means your meat and all the other animals brought in during the same time period get mixed together and you get your proportional share back.

Why does it matter you might ask? Would you really want back meat that you have no clue how the other person took care of the carcass?

Yes, it is an extra effort on our part to keep everyone’s meat separate through the entire processing effort. We do not charge extra for our decision to do things the right way. The care that we give to your animals is the same as we would do for ourselves.
