AS LOVELY TO LOOK AT AS THEY ARE TO EAT, THESE BUTTERY CROISSANTS ARE FILLED WITH A LIGHTLY SWEETENED MIXTURE OF CREAM CHEESE, CHOPPED FRESH CRANBERRIES AND ORANGE ZEST.
INGREDIENTS
Croissants
1 package (8 ounces) cream cheese, softened
1/3 cup powdered sugar
1 teaspoon orange zest
2 teaspoons orange juice
1/4 cup fresh or frozen cranberries, coarsely chopped
2 packages (8 ounces each) refrigerated crescent rolls
Glaze
1/2 cup powdered sugar
1 teaspoon orange zest
2-3 teaspoons orange juice
DIRECTIONS
Preheat oven to 375°F. For croissants, combine cream cheese, powdered sugar, orange zest and juice in Small Batter Bowl; mix until well blended. Using Food Chopper, chop cranberries; stir into cream cheese mixture. Unroll crescent dough; separate into 16 triangles. Using Small Scoop, place rounded scoop of cream cheese mixture on shortest side of each triangle. Starting at shortest side, roll up triangle loosely to opposite point. Arrange rolls, pinwheel fashion and point sides down, on Large Round Stone with Handles to within 1/2 inch of edge. Bake 15-20 minutes or until golden brown. Cool slightly. For glaze, combine powdered sugar, orange zest and juice in Small Batter Bowl; mix until well blended. Drizzle over warm croissants.
Yield:
16 croissants
16 servings of 1 croissant
Nutrients per serving:
Approximately 180 calories and 11 grams of fat per serving
Cook's Tips:
There’s no need to thaw frozen cranberries before using them in most recipes.
Store cranberries in resealable plastic bags in the refrigerator for up to 1 month, or in the freezer for up to 1 year.
HAPPY NATIONAL BLUEBERRY PANCAKE DAY
INGREDIENTS
1/2 teaspoon butter or margarine
1 cup all-purpose baking mix
1/2 cup milk
1 egg
1/2 cup blueberries
Powdered sugar and maple syrup (optional)
DIRECTIONS
Set the oven to 425°F. Put the butter in the Toaster Oven Pan and spread it over the bottom of the pan using a paper towel.
Put the baking mix into the Classic Batter Bowl. Add the milk and the egg. Whisk just until the large lumps disappear. (The batter should have small lumps.) Pour the batter into the pan, then sprinkle the blueberries over the batter.
Bake the pancake for 13 to 15 minutes or until the top is light golden brown. Carefully remove the pan from the oven using Oven Mitts.
Sprinkle powdered sugar over the top of the pancake, if you'd like, then cut it into 6 squares. Cut each square in half from corner to corner to make 12 triangles. Serve with syrup, if desired.

12 pancake triangles
6 servings of 2 pancake triangles

Cook's Tips:
If you'd like, you can sprinkle 2 tablespoons of mini semi-sweet chocolate chips over the batter instead of the blueberries in Step 2.
