Made some pork stuffed smoked (baked) potatoes tonight. It has butter, smoked pulled pork, smoked jalapeño cheddar sausage, bacon, green onions, bbq sauce and Mexican crema. Love this! Keep on Bbq'n! . Gotta love that "Dust'!

Well today wasn’t what we hoped. 3rd place beans and 14th place brisket. Over 50 teams @ the Lone Star BBQ C.O.T.Y. Cookoff. Congrats to all that got their number called. Thanks Steven Powell! You always offer good advice and friendship.

Did a little experiment today with a cheaper choice brisket this Labor Day.. Injected it with Kosmos Reserve blend with added Tbsp of moisture magic, rested it overnight, then injected it with waygu tallow, seasoned it and cooked it up. The taste was really good. Should have cut in half before cooking to do a comparison and see if the injections actually made a difference. Either way, the final product looked, smelled and tasted great. The brisket was the only thing I took pictures of but we also had roasted garlic jalapeño sausage and hatch green chili Mac & cheese. I don't only make bbq. I can grill too! A perfecly grilled tenderloin, smoked potato and smoked sweet bi-color corn! Steak was done on the chimney that I start some of my bbq fires with. Thank you Monica Blanchette for the tenderloin! It was an awesome meal! That tenderloin was so good! Keep on bbq'n!

Tri Tip fajitas for the WIN tonight! Tri top was done to medium rare and once put on the sizzling veggies...it cooked to a medium well. So tender and so delicious'o!

Well...not a bad day! Got a call in ALL 5 categories! 4th Chicken, 5th ribs, 8th Pork (first time) and 9th brisket (shocked at this one..thought I nailed this one) and 1st in Beans.! Collected 3 checks! Not a bad day anyway! 5th Overall! I'll take it anyday!

Well...another competition in the books! Everything I own is now wet...thanks mother nature! Now we await awards. Not expecting great things today but had a great time trying out Champions Barbecue Alliance. We will be back! Now for the pictures of some of our turn in boxes and other random things! We are headed to awards to see if we did anything exactly right...not holding my breath...its our first one at CBA but learned a lot!

Pulled pork for a Celebration of Life tonight. Homemade coleslaw and baked beans. More pics later.

A little Jack Daniel's Pineapple glazed pork chop, homemade smoked bbq (baked) beans, some Hawaiian Mac Salad and an appetizer of smoked bacon wrapped asparagus!

Some grilled chicken and onion enchiladas with smoked queso sauce topped with queso fresco, cilantro and a drizzle of Valentina hot sauce! Delicious!

Smoked fresh ground waygu brisket burgers on a toasted brioche bun, bacon wrapped pickles, Lays jalapeño cheddar chips all washed down with a cold Community Beer Co Honey Citrus Blonde! Yumm! Happy memorial day!

Smoked tri-tip with finishing salt, grilled zucchini, squash and asparagus with potato salad and macaroni salad. Love tri-tip!

Reverse seared Prime Tenderloin Oscar (my version with lump crab on a bed of perfectly grilled asparagus topped with bernaise sauce) with a side of grilled Romain heart salad ALL cooked over

8th place brisket! Took home a little $! I think this was billed as a "state championship". Not sure exactly what that means for sure. There were some really strong teams out this weekend! Not too bad. I'll take it. Need to get to top 3! Keep watching....we're gonna get there!

Our happy place! Loved cooking against all the wonderful cooks at the "Freedom Is NOT Free" IBCA cookoff at the VFW Riley Stephen's memorial post! Thank you to the men and women of the United States military that have fought for our freedom! Thank you to the VFW post 7835 in Granbury for allowing us to stay and enjoy your place! We always love being the last to leave and enjoy the beautiful country that so many have sacrificed their lives for!
