We should have a very nice selection of fish coming in this weekend lots of awesome fresh variety.
First note for the week is on crabmeat. Prices are coming down a bit & looking very nice. MD Jumbo Lump will be $49.99/lb this week & MD Lump will be $24.99/lb.
This week we will also be offering a special on LUMP Crabcakes. These are the same mix as our normal Jumbo Lump crabcakes, but using regular Lump crabmeat. They will be on sale this week for $7.00 each.
Both types crabcakes will be on offer this week, but only the Lump are on sale & will be marked as such on the packages. Our normal Jumbo Lump Crabcakes are still $12.99 this week. Only the Lump Crabcakes will be on the $7.00 sale.
Big fish highlight of the week is we have First of the Season Coho Salmon coming out of Petersburg Alaska. We will have Fillets & Whole Fish Available.
Coho Salmon doesn't get the recognition that fatty king and bold sockeye do, but it has a lot going for it. Its medium fat content gives it a mild, subtle flavor that is less in-your-face. Coho salmon is great for people who don't like a pungent fishy flavor. With a semi-firm flesh, this salmon has enough fat to be unctuous but not overpowering, and enough flavor to be filling and tasty but not too intense.

Another fun unique fish we will have in this week is Monchong. We've gotten it a few times in the past, but it's a seldom seen fish in most markets.
Monchong is delicious though, it has a firm texture and a moderately sweet, rich flavor that's similar to black cod and halibut. Some say it's buttery, while others describe it as mild. Monchong's flesh is white with pinkish tones that turn white and flaky when cooked. It's delicious when marinated & grilled or sliced thinly and made into sashimi. It also makes fantastic fish tacos.

Got some nice stuff coming this week. Some fun Fish of the Week, that will be on sale for 10% on Friday if you have our app.

This week for fish we have some cool things like the Dienton Snapper or Cubera Snapper on the top of the list. The Cubera Snapper is a large saltwater fish found primarily in the Western Atlantic Ocean. Its firm, white flesh is known for its subtle sweetness and mild flavor, making it incredibly versatile in the kitchen.

We also have more of the Gloucester Massachusetts "Wicked" Bluefin Tuna coming in. "Wicked Tuna" if you didn't know, was a show on National Geographic following fisherman from Gloucester Massachusetts as they catch huge North Atlantic Bluefin. Since the late 1940s, Massachusetts has been one of the top states for commercial landings of high quality bluefin tuna.

We brined some chicken for 3 hours then slow braised it in its own juices & oils with herbs for another 3 hours. This chicken is so juicy & so tender it's ridiculous.
Then we covered it in a house recipe BBQ sauce & serve it with a side of Chesapeake style potato salad & Cole Slaw.
At the last minute today we also got in some local sweet corn, so we'll also be serving it with a nice piece of grilled corn, everything for $11.99 plus tax.

Fresh Chilean Sea Bass. Not Previously frozen. This is a rarity among most Chilean Sea Bass, so you can be sure to taste the difference. If you've never had Chilean Sea Bass also known as "Patagonian Toothfish" you're definitely missing out. It's one of the most premium fish on the market, known around the world for its luxurious buttery texture & rich flavor.

Fish of the Week, we've got some nice highlights. Two new items as well. The first highlight is definitely the...
Westport Washington Wild King Salmon. This is prime season for king salmon fishing in Washington & they get to some impressive sizes. Wild king salmon has a dense meaty texture, a rich fatty consistency, and a full fresh fish flavor with a hint of sweetness.

Our two new items this week that are our Fish of the Week are...
Wild California White Seabass. Despite its name, the white seabass is acrually the largest member of the croaker family. It has a mild, slightly sweet flavor and a firm, meaty texture with medium-sized flakes. It's similar to sturgeon in texture and flavor, and it's a good choice for people who don't like seafood that tastes very "fishy". Because of its mild flavor, white seabass can take on the flavors of marinades, sauces, and seasonings well, and it goes well with many cooking methods.

The last new fish this week is Wild Caught Hawaiian Ahi Tuna. Hawaii is known for its fresh and high-quality tuna, which is commonly referred to as ahi. The word ahi is Hawaiian and literally means "fire". It originated in ancient times when the fish would pull lines so quickly that they would smoke against the canoes of Hawaiian fishers. We'll be getting this one head-on which is a rarity, so if you want to buy the head let us know. That delicacy will be first come, first serve.

Got some nice stuff planned for the week. Check out our previous post for information on our Fish of the Week: Yellowedge Grouper & the new fish this week Dogfish aka "Spiny Dogfish" or "Cape Shark".
Some other nice highlights this week featured in the ad...
- Argentina Bay Scallops 80/100: Sustainably harvested from the Argentine Continental Shelf, these are smaller than sea scallops, Patagonian Scallops are ideal for salads, ceviche and many other applications.
- Amberjack Fillets: Amberjack fillets have a rich, buttery flavor that some say is a cross between tuna and mahi-mahi. Others describe it as sweet and mild, or leaner and milder than yellowtail. Amberjack is also firm and delicate, with white meat. Because of its mild flavor, it doesn't require much seasoning.
- Japanese Hiramasa: This fish is farm raised in Japan, and is an exceptional sashimi fish. Hamachi sushi is known for its firm texture and rich, buttery flavor. It is often described as having a slightly sweet and delicate taste. The fish is versatile in cooking, not only served raw but also grilled, baked, or used in various dishes that highlight its delicate taste and buttery texture.

Firstly, I just want to thank everyone for a fantastic weekend. We hope all you dads out there got to enjoy some great food & enjoy the beautiful weekend.
This week we have two new fish coming in that I wanted to highlight.
Our Fish of the Week: Wild Caught Yellowedge Grouper
Yellowedge Grouper has a mild, unique flavor that's been described as a cross between bass and halibut. It also has a light, sweet taste and large, chunky flakes, similar to lobster or crab meat. Yellowedge grouper meat cooks up firm and holds its moisture well. It can be grilled, fried, sautΓ©ed, broiled, steamed or baked & is also excellent for soups and chowders. Most describe Yellowedge as some of the best eating fish around.

The other fish this week will be a new one, that we have not carried before, so I'm very interested in trying it myself:
Dogfish aka. "Cape Shark" or "Spiny Dogfish"
Dogfish fillets taste mild and slightly sweet. Their diets consists of crabs, shrimp, mollusks, and lobsters. The fillets are dense and turn white when cooked. Dogfish is often used as a cod substitute for fish and chips in the UK. This fish is fantastic grilled, broiled, roasted or baked. According to the NOAA, Dogfish are not overfished or subject to overfishing & the Monterey Bay Seafood Watch rates Dogfish caught in the USA as a (Green) Best Choice for sustainability.

It's Father's Day Week, so get ready for a busy one. Make sure that you try to call us as early as possible to get those Crab & Chicken orders in. As we get closer to the weekend it gets harder for us to answer all phone calls due to the high customer volume & high call volume, so calling Wednesday/Thursday/Friday would be advised.

Our Fish of the Week is a new item we have not had before. Wild Caught New Zealand Bluenose Bass.
Bluenose fish, also known as Antarctic Butterfish, has a distinct buttery flavor and a medium-firm texture with large flakes. It also has a sweet, scallop-like smell and white flesh. Some say that Bluenose is moist and succulent, and that people who like Chilean Sea Bass will also enjoy it. Bluenose is versatile and can be prepared in similar ways to Chilean Sea Bass or Grouper, such as by searing, sautΓ©ing, baking, braising, or broiling.
