Hanalei as most of Kauai has been effected by some big hits.

The floods of a few years ago devastated the heard of Bison of Hanalei as they were displaced and lost in the storm.

This herd's blood line is linked to origin of Bison and thankfully the heard has become abundant enough again to start slowly sharing.

Keeping it simple is the best way to showcase quality ingredients. Some of my fondest memories of childhood are from preparing to grill with my Granddad. It's the nuances of When & How-much that makes it great or not so great.

Few Tips to Grill

Proper Temperature
Grill should be allowed time to get nice and HOT!
It's how Restaurants get that signature Crust

Salt and Pepper and...
Season Everything with good Salt & Fresh Pepper plus...!
Small amounts throughout to layer the flavor.

Let it Rest
Don't cut it before it has time to rest, you lose the Juices.
Remove it just before it's "Done" so after it's Rested it's perfect
