This is a garlic & thyme infused pan seared sea scallops with venison back straps topped with an Americano molè. I know the whipped sweet potatoes do not look all that great, I wanted something different, but I was starving!

Had a little/lot of fun tonight with this dinner. All of it was amazing, I did not get to cut the steaks but I assure you they were perfect. I'm not name dropping but maybe he will comment on how good it was ey, Mark Brockman?

Just got back from up north and man I'm glad I took a cooler! Lmao...
I planned the trip to land in a little town in south west Michigan. We'll, long story short there is an old school butcher that makes hot dogs, brats, and bologna. They also make some of the best liverwurst/ liveliest is eat they call it.

What I do is, I make fresh meals 2 times a week. All meals usually have a balance with 1 protein, vegetable, and a starch. At times I will make 1 protein and 1 vegetable but they will be great either way. These are usually special dishes.
