Introducing Marci Spellman Moreau Executive Director, East End Food
Driven by her personal story, Marci has dedicated over two decades to researching the power of food. Her journey began when her daughter, Rachel, was diagnosed with leukemia at two years old, and her husband, Michael, was diagnosed with breast cancer.
Marci holds a Bachelor’s degree from the University of Saint Joseph and a Master’s Degree from the University of Southern Connecticut. She founded Time For Life, a nonprofit for children with cancer and their families, and explored the impact of food on health.
She then ventured into private label food production, creating a brand focused on organic, nutrient-dense ingredients, and initiated educational food programs. Marci writes two columns for VIVANT Media Group: The Power of Food, and The Chef’s Table, sharing food stories and insights.
Certified in integrative medicine and nutrition for mental health, Marci specializes in nutrition for conditions like depression, anxiety, PTSD, Alzheimer’s, and cancer. Her mantra, “using food first to power the body and mind,” guides her as Executive Director at East End Food.

“I know my worth. I paid dearly for every ounce of it.” Finding our way can often be overwhelming, and all of us at one time or another will feel lost, and maybe even take a wrong turn, down the wrong path…
I know I’ve went in the wrong directions a few times, especially when life throws the infamous curve balls, you sometimes try to catch them, and you drop the ball and veer off for a bit…For me, when Rachel was fighting leukemia, or when Michael was dying, or when my business was falling in the gutter, it’s pretty easy to question your worth…
Maybe because I had four daughters who I knew were watching me, I had to get stronger…There was a lot to lose, and I already lost too much…and not to make it sound simple, but I turned to food. And no, it is not a simple, as I started eating more veggies, or organic, or juicing every morning…Sure, I do that, but I also did thirty long years of research, looking at the impact of food and nutrition on our physical and mental health. This meant I spent a lot of time alone, reading and studying and thinking about how to right all these wrongs.
It started when I needed to keep Rachel alive after her bone marrow transplant so I focused on boosting her immune system, and I quickly realized cancer traumatizes souls as much bodies, and I studied the psychological impact of cancer on the children who are diagnosed and their family members. And then I realized cancer never really goes away so I looked at using food to help with the PTSD, depression and anxiety that goes along with all of this…and although there is a lot more to talk about, the point is, there were many times in my story, I felt kinda crappy and questioned my worth.
But not any more, because I’ve done the hard work.The research, the education, but mostly, I learned how to use food to become stronger, physically and emotionally.
I am now certified in nutritional counseling and wellness for mental health, you could say I’m a believer, and between myself, food, and, even God, I found my worth, and I paid for every ounce of it.
Personally I think if you need to do better in life, sometimes you need to pivot, make a change, and just make it happen…and for me, I think nothing will ever change until you change it with food, so change the food you eat for the better and a better life will follow. I wish more people believed food plays a huge role in healing trauma…
Especially, after a traumatic experience, food and nutrition are even more important, because to really heal, our bodies and our minds have greater nutritional needs.
And all the latest research supports this…
Trauma creates havoc on our bodies, and our minds, particularly our digestive system, damaging the villi that line our small intestines, creating numerous problems, such as, leaky gut and increased inflammation for every system in our body. We are then unable to absorb the nutrients our body and mind needs to be healthy and happy and instead of healing from trauma, the symptoms of depression, anxiety, and post traumatic stress increase.
Additionally, with an unhealthy gut microbiome, our immune system is weakened and there is an increase of physical health problems after trauma. It’s a never ending cycle of suffering, yet food can stop the hurt and help to heal, our bodies and our minds.
Trauma is no stranger to most of us, and personally I have seen, and even felt the damage, but I’ve also witnessed the healing, recovery, and hope, especially with food.
“ If you are uncomfortable, change. Don’t stay with something that doesn’t work for you. Be fearless…always be fearless.”
The positive effects of healthier eating contribute to a mindset that is more resilient and confident in the face of challenges. The healthier the foods you eat, the more you are able to confront your problems, navigate failure and change the bad into something better ❤️
In honor of Breast Cancer Awareness Month, and all the warriors I love, and have lost, I wrote this article, “The Power of Food is becoming much more Powerful.” here’s an excerpt…
Better health with better food is always something to celebrate. However, the most recent breakthrough is by far the most compelling. Research is revealing individuals with more of the good gut bacteria and less bad gut bacteria are more likely to respond to the newest immunotherapy drugs when in treatment for cancer. And even more, a higher fiber diet appears to feed the good bacteria, making them better fighters and playing a role in strengthening the immune response to cancer, as well.
Although this area is very new, it’s hard not to get excited at the promise of, in some way, influencing treatment and recovery for cancer with food. To me, when food, science, and our bodies can work together to save lives, there is nothing more powerful. I’ll gladly stay in the kitchen for this one. ❤️ linktree in bio for full article
“September is National Su***de Prevention Awareness Month and it is also National Childhood Cancer Awareness Month, and food needs to be part of the treatment plan for both cancer and mental health.”
In my life, these two causes have fueled my passion and drive to find more power, as I like to say…
And September always brings me back to the beginning of my story…It was the month my daughter, Rachel, had her bone marrow transplant. September 28, 1990.
Some things you never forget.
Rachel was only two years old, I was not much older, and found myself carrying her though the halls of Dana Farber Cancer Institute trying to figure out what else I could do to save her life.
My focus was on winning the battle with cancer but what I didn't realize at the time was, with the physical disease, comes the emotional fallout. Lots of it…Cancer creates havoc and has the ability to turn things upside down, and not just to the body~to relationships, and to finances, but mostly, to our soul~Cancer is a life threat, and in fact, it is now considered to be a qualifying event for PTSD. So with it comes all the messy and painful impact of trauma; depression, anxiety and emotional unrest. Nothing is safe and mental health issues increase and become complex and complicated, putting too many at risk for more severe mental illness and yes, even su***de.
I’ve spent my life researching interventions that can help people heal, and more and more the research is pointing to food and nutrition as a factor in how our bodies heal for cancer, and how our minds heal from the debilitating depression that can lead to severe mental illness and su***de.
It’s a powerful message in support of changing the paradigm to use food as part of the treatment plan for both cancer and mental health. I know I’m hoping we begin to do just that. ***deprevention
If I look tired that’s because I am. It’s been a tough week…I spent a lot to time with doctors this week, talking about genetics and cancer. Grace had the genetic testing for the BRCA2 gene, the same gene that her father, Michael had. Chances are 50%, she has inherited this gene. Weird to say, but its really a flip of the coin…
I’m super proud of her. It takes courage to make these hard decisions and when you are sitting in a room with genetic specialists and oncologists the conversations can be pretty scary.
But in all the fear, as they took the blood from her arm she was certain, resolved, and very, very brave. Of course, this cancer talk has been our language for her entire life.
Grace was only one when her father was diagnosed with breast cancer and just turning twelve when he died, and all during that time, her sister Rachel was recovering from the bone marrow transplant that treated her rare form of leukemia. It’s safe to say we are fluent in cancer.
When it comes to cancer, we always want to talk about healing, and recovery, and saving lives. I’ve had to figure out how to do that for a very long time so I started doing the research. Believe it or not, in all the science there is more and more information about food. It’s the very reason I talk about the power of food so much, because it works.
The research is telling us certain foods can improve our immune response to diseases, reversing and even halting the progression of some illnesses, and better, healthier foods create a healthier gut microbiome so the newest immunotherapy drugs can work more effectively and cure more cancer.
And for people who have genetic mutations, what you eat has a profound effect on how your DNA is “expressed.” Meaning, certain foods can turn off genetic markers for cancer, and many other diseases as well.
Your diet and the food you choose to eat really does have life or death ramifications. For us, this is why I’ve choose to make food such a big part of our life. Put simply, it gives us hope. And this week, as we wait for Grace’s results, it gives us something to hold on too.
There’s a lot of power in food that grows in the Summer Solstice, especially tomatoes…They have lycopene that will improve heart health and cardiovascular functioning, help to fight major diseases. and improve anxiety and depression,with recent studies showing remission of these mental health issues…

To me, the best part of learning how to eat to improve your mental health is the feeling of power. It’s that feeling of being stronger, and happier and healthier. You know those days, when we feel like we have it all together, and even when things go wrong, we are still ok..Our anxiety does not get the best of us and adversity is easier to deal with…We can pick ourselves up and dust ourselves off much easier.
For me, I’ve needed this power, because picking myself up, and dusting myself off, was an everyday occurrence when you are living with a health crisis. I spent 28 years taking care of people I love while they were battling a cancer diagnosis, and I now know why it’s referred to as a battle.
But the real truth is, we all have our battles and everyone of us needs more power to live a life that is happier and healthier. We are all on one trip of this thing called life, so our only choice is to make it the best one ever, no matter what life throws at us. That means when life brings us into battle we know how to prevail, and when it comes to our body and mind, the best line of defense, will always be food.
