"During the "Sweetest Ingredient" summer campaign, Shuman Farms is teaming up with restaurants around the state to create special dishes featuring Vidalia onions, which will be available to diners for a limited time. Shuman Farms is also pledging to donate 5,000 meals to each chef's local food bank to help "sweeten" the deal. Here in metro Atlanta, both Little Sparrow in Westside Provisions and 's in Virginia-Highland are taking part in the campaign, among other top restaurants."

The city of Vidalia and the surrounding region in southeast Georgia are known the world over for growing the sweetest onions available, but did you know that the crop was originally a fluke? It's true!
During the Great Depression, farmers in the area planted onions in search of a new cash crop. Once they were harvested, the farmers were surprised to find that they were much different than expected – they were sweet!
The sandy soils of southeast Georgia, combined with the average rainfall, allowed sulfur compounds (the elements that make an onion hot or bring tears to your eyes when they’re cut) to wash away. This is what allows the onions to remain mild, sweet and uniquely delicious.

Sweet Onion Storage & Prep Tips 👏
Looking to keep your sweet onions fresh and flavorful? Here are some handy tips to make sure they stay in top-notch condition:
1️⃣ Store them solo: Keep your sweet onions in a cool, dry place, separated from each other to prevent bruising.
2️⃣ Handle with care: These beauties are delicate due to their high sugar and water content, so handle them gently to avoid bruising.
3️⃣ Wrap & chill: Wrap each sweet onion in paper towels or newspaper before storing them in the fridge for extended freshness.
4️⃣ Get creative: Hang sweet onions in clean pantyhose legs, tied with knots in between each onion, for a unique storage solution that keeps them fresh and accessible.
5️⃣ Elevate for airflow: Place sweet onions on elevated racks or screens in a cool spot, ensuring they don’t touch each other to maintain airflow.
6️⃣ Dry 'em out: Chop sweet onions and dry them in the oven at a low temperature until thoroughly dry but not browned. Store in airtight containers at room temperature.
7️⃣ Freeze for later: Chop sweet onions and freeze them on a cookie sheet before transferring to freezer containers or bags. For whole onions, peel, wash, core, and freeze in a bag for later use in cooking.

Vidalia Onions have been named the “the world’s sweetest onion.” Not only are these onions bursting with flavor, they also have a vibrant back story.
Did you know? Vidalia onions can only be grown in Georgia.
According to the Vidalia Onion Act of 1986, there are only 20 counties in the United States that are allowed to grow Vidalia onions and sell them under the trademarked name. All of them are in Georgia, centered around the small town of Vidalia, GA. In 1990, Vidalia onions became the state’s official state vegetable.
