Gluten-free French Toast โ CHEF LOUISE RAKERS Instructions: Mix milk, vanilla, cinnamon, and maple. Batter bread completely. Fry bread in pan on each side until golden brown. Serve with jam and butter.

I love what I do and sometimes the backside of the medal looks a lot different than the front.
I work hard for what I love and cannot stop, but it is interesting how we sometimes can change so much within a few years.
I hope that this move to Spain will give us as a family more time to really ease into family life and escape the fast paced work structure.
I am so excited to feel deep inspiration after slowing down and being more present with my son, but I also fear if I am able to do it.
I have always been in business, been busy and now I am entering a new era that has to be full of present moments and life altering decisions. To next chapters and to being REAL ๐ซถ๐ผ
Almost two weeks post op and I have to say being home during the evenings these past two weeks post surgery has been amazing in so many ways. It has really made me realize how special it is to be surrounded by my little family and have good friends sharing dinners with us when life throws a tantrum on your foot. ๐
I am so grateful for these nights at home with Jack, watching Sean make good food and it makes me so proud to see him create fully plant based meals for all of us while I heal and Jack grows bigger every day.
Hereโs to a good meal and family time. I guess slowing down ainโt so bad after all โค๏ธ

WHICH ONE'S YOUR FAVORITE?
Recipe ๐ Black Rice Vegetable Paella!!
This recipe will make you feel like summer and sitting on a Spanish Bodega ๐ซถ๐ผ
Ingredients:
1 cup black rice
2 cups vegetable broth
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, sliced
1 broccoli head, chopped roughly
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 firm tofu block, pressed and cut into cubes (I recommend using a tofu press)
1 teaspoon smoked paprika
1/2 teaspoon chili flakes
1/2 teaspoon saffron threads
Salt and pepper to taste
Fresh sprouts for garnish
Optional: Add cashew cream on top
Instructions:
1. In a medium saucepan, bring the vegetable broth to a boil. Add the black rice, reduce heat to low, cover, and simmer for 30-40 minutes until the rice is tender and the liquid is absorbed.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautรฉ for 2-3 minutes until fragrant.
3. Add the bell peppers, broccoli, tofu, zucchini, and cherry tomatoes to the skillet. Cook for 5-7 minutes until the vegetables are slightly tender.
4. Stir in the smoked paprika, saffron threads, salt, and pepper. Cook for another 2 minutes to allow the flavors to meld.
5. Add the cooked black rice to the skillet with the vegetables. Stir well to combine and cook for an additional 5 minutes to heat through.
6. Serve the black rice vegetable paella hot, garnished with fresh parsley. I like to serve min in a small paella pan.
7. Enjoy your flavorful and colorful black rice vegetable paella as a delicious and nutritious meal!

A bite of Nordic was served with style Friday night. Together with we had set a table to fit a vibe from a French farmhouse with a touch of Nordic hygge.
All the guests got to enjoy baguette and herb butter as a welcome. Next we served dishes like black bean tofu pasta, shaved Brussels in champagne vinaigrette, lemon dill potatoes, roasted carrots on beetroot hummus, charcuterie, salted chocolate tarts and so much more.
I am so lucky to be able to cook for so many amazing guests at these dinners. Next one will be up soon for booking and this one will be for everyone. Also the guys! ๐ฏ

I asked to draw me a few pictures of my vision. Itโs honestly insane how she can draw so close to my words ๐ซถ๐ผ
No doubt that will take this to the next level - she told me she has a plan to hang an olive tree inside too between the baguettes and dried herbs. Itโs always amazing to see what Brynn does with the vision we have. I ALWAYS feel so amazing watching her work. Sheโs so talented.
For the food. I am working on an extensive menu using so many different types of flavor and textures. Itโs not farmhouse theme without onion soup and bread. And itโs not me, if all of is not vegan and gluten-free.

What an INCREDIBLE weekend at this year's Charleston Wine + Food Festival!!!
Despite the weather putting a damper on our demo plans at the Culinary Village, we're SUPER GRATEFUL for everyone who stopped by and supported us. All of the 100 baguettes we baked sold out!!! Who knew the free bread would be such a hit? ๐
It was a blast hanging out with fellow industry folks and sharing laughs over delicious food and wine too. Opening Night was WILD ๐
And of course, HUGE kudos to the CHSWFF team for rolling with the punches and putting on an amazing event despite the challenges! We'll definitely come back even stronger next festival! Can't wait to do it all again. SEE YOU NEXT YEAR!
