New Haven inspired pizza with an ethereally thin crust and fresh, local ingredients made in Brooklyn
Eggplant Parm, but on a pizza. 🍕 Locally farmed eggplant is in peak season right now, and crispy, thinly sliced, and breaded rounds pair perfectly with our fermented red sauce with lots of mozzarella and pecorino. The kitchen is open today from 2-10 PM.
FLAVOR ALERT — on Wednesday, 6/5 we will have the celebrated chef in the kitchen collaborating with Chef Esther and the crew! Fresh off of publishing his cookbook “Kung Food: Chinese American Recipes from a Third Culture Kitchen,” Jon will be bringing delicious ideas to Grimm’s rooftop where we’ll be dishing out well-charred apizza pies with irreverent and heretical Chinese-inflected toppings. WE CAN’T WAIT TO TASTE!

Salty prosciutto and tart rosemary lemon goat cheese marry in every garlicky-cheesy slice of the Prosciutto and Goat Pie. As we plan our transition over to our spring menu, we’re enjoying every last bite of our winter pies before they enter hibernation.
Thank you to our local and small-batch purveyors, including .chatham.creamery, whose goat cheese is the star of this pie, and , whose prosciutto is from pasture-raised rare-breed heritage pigs.

For us, it’s collard greens. We make them the old-fashioned way–low and slow–and coat them in fermented pickle juice once they are done cooking. Providing a welcomed bitterness and bright acidity, you can find collards nestled into our winter Cozy Pie alongside fresh mozzarella, pecorino, mashed potatoes, Benton’s Heritage Bacon, and garlic.
