This past weekend I not only had the privilege of attending the ECU graduation of my best friend’s daughter, but I was gifted with the wonderful and much deeper education on the immigration and integration process our country and businesses are experiencing.
I assumed SO much and had much of it all WRONG!
I left Andreas home with an entirely new perspective and overwhelming motivation to assist her in getting the knowledge to anyone and everyone willing to listen.
She’s not just another boring power point presenter that will leave you rushing to the vending machine for a caffeine hit, but rather an electrifying and inspirational woman who converses with first hand knowledge and information. She herself came to this country as a young child speaking no English. But via hard work and an unparalleled kindness towards others, she has become the inspirational example of The American Dream.

It’s tough work living on a farm!
When you’re a mountain farm baby, you get your own personal protection puppy.
This is Rosey, she’s half German Shepherd and half Great Pyrenees and she’s already proven to be in love with her “job.”
They’ll grow up together and wherever Kayla goes on the farm, Rosey will go too.
*Human momma (me) is always around, but a little help never hurts ❤️

Just like chickens, pigs, turkeys, deer in the forest etc - everything is cute when they’re babies - but no naming or getting attached. On a homestead everything has a purpose and everyone has a job to do.
FINALLY!!!! - she doesn’t have to listen to me nag anymore to dress warm and appropriate for farm chores and I don’t have to listen to her complain that she’s cold.
Anyone with teenage daughters - you know what a win this is!! 🥳

Raising young poultry in the winter isn’t for everyone, but we’ve set up a nice system in the barn and I am actually preferring it because there are a lot of benefits of colder weather - one being no annoying flies.
We will have baby rabbits any day now! I’ll post when they arrive.
Our newest addition - a breeding trio of Kune Kune pigs (pronounced Coo-knee Coo-knee). Lucky guy huh - well depending how you look at it 🤔
We chose this breed because they are the smallest of the true breed pigs (micro and pots are not “real” pigs) while still getting rather large and producing a very fine quality meat.
Another cool fact about Kune Kune pigs is they are grazers versus rooters which means they are awesome in orchards and out on the pasture.
We’ve finally gotten to the point where I am no longer buying any meat from the grocery store. Between the wildlife and our own animals it’s such a wonderful sleep at night feeling.
Top Two things I hate the most - being cold and feeling vulnerable/unsafe.
I know many of you are on the road to increasing your self sufficiency or at least thinking about it. With the state of the economy and/or fear of power grid Integrity, it’s a good feeling to have backup options.
I purchased the Buck Stove 94 and installed it downstairs in the center of our home. We have a 1901 3000sq ft 2 story farmhouse that is still quite inefficient as we continue renovations.
Although this stove is a bit more expensive than others you can find on the market, it’s worth Every.Single.Penny!
Veteran Operated & Made right in NC, this stove has heated our entire home as it’s gotten down into the >20s to the point we’ve found ourselves kicking off the blankets at night.
It’s incredibly heavy so we poured a solid concrete pad to the ground, but we were renovating anyway.

I had a rule when we started this farm - do NOT name the breakfast, lunch or dinner.
But like a presidential pardon, by the grace of my oldest - we have Chip the Turkey.
He lost his lady friend to a grouchy old owl and with an odd level of genius you wouldn’t think could possess a feathered animal, took up a friendship with my daughter.
Turkey is the standard for Thanksgiving, but I guess this year we will be eating pork.

We're BACK!!! .... well, kinda. I must admit taking a break from social media was much needed and proved to be healthy.
We are all settled into our new mountain home and have been quite busy - with no signs of slowing down.
A sneak peek of an update : Our little family has grown… A LOT!!.
I married my best friend in a private ceremony at the top of our mountain and we had baby Kayla Marie-Anne Knutson who is already proving she's a big person in a little baby body.
Aside from a new human, we have everything from chickens, ducks, turkeys, kitties, dogs, a rescued donkey and endless babies coming out of the incubator. Soon we'll have horses, meat pigs, quail and I promised Kaden a miniature highland cow.
We've learned some hard lessons with goats and rabbits and our local wildlife boasts more deer than squirrels, we have lots of black bears, fisher cats and more.
Kaden knows that I'm a sucker for local events, mini road trips and baby animals - so every morning over iced coffee we are discussing that days new adventure - until school starts, which she’s already day dreaming about the “cute farmer boys.” 🤦🏼♀️
Aside from all that we are still overhauling our 1901 farmhouse and better preparing for cold weather as it comes much quicker around here.
I was unpacking 1803 Fall candles over the weekend and got a couple heart warming emails, so here I am. Now that things are settling more into a routine I'll be better able to refocus on Carolina Pine and bring you exciting products, services and content.

After a much longer delay than anticipated, 2nd Amendment on Main is back! We want to thank everyone for your patience during this transition. The 2nd Amendment on Main that you experienced before will be much of the same, with some new perks. There's still a large selection of Grunt Style, Nine Line, Ranger Up, Black Rifle Coffee, Suavecito, Duke Cannon, Mandles, and much more - to include a large portion of the store dedicated to veteran owned/affiliated small businesses in and around Wayne County.
The new owners, Matthew & Angel Sellers, are Wayne County residents and have called Wayne County home for almost their entire life - excluding active-duty military service in the Navy. They're raising their children here and wholeheartedly support our military, police, fire, EMS, corrections/detention, probation, and all other front-line public service workers who do their part to make America the best country to live.
In addition to existing inventory, new inventory has been ordered and is to come! Please be patient as we're working to keep 2nd Amendment on Main stocked with your favorites and new, exciting products! If you're still doing your Christmas shopping, make sure to stop by. There are plenty of great gift ideas and stocking stuffers. If you're dealing with someone tough to shop for, we've got you covered with gift certificates.

We’ve been very blessed with happy ducks and chickens this year!
But if you’ve ever raised birds, you know that production significantly decreases as the shorter days and colder weather sets in.
I thank Pinterest for this idea! - freezing muffin pucks. Once these are frozen they’ll go neatly in wax paper, and each time I cook this winter I can let one thaw in a bowl and whalla!
There are other methods like lime water canning and freeze drying, but I’m not there yet 😂
In church this morning the message was about the necessity of asking for help - as much as we may want, we can’t always do everything by ourselves.
Colder weather comes a lot quicker in the mountains and with everything else on our plates, I worried about firewood.
The husband and wife team of Sawyer Family Mills took away that worry and went out of their way (our house is not easy to find nor convenient to get to) to make sure we will be warm this winter.
Every time I come in from being cold and curl up next to the wood stove, I’ll be thanking these very kind people 😊

I’ve been cooking most of our meals outside on a fire for a few reasons:
1 - I love fire
2 - our kitchen is completely demolished as we renovate the house
3 - My two favorite shows are Vikings & Outlander. So if they cook on a fire, then so will I 💪🏻
Once you learn the dance of cast iron and fire, it’s almost impossible to stand over a “boring” stove again.
I’ll keep you updated as the outdoor kitchen project comes alive 😊
