This Italian potato salad is a perfect side for summer barbecues!
Ingredients:
2 lbs yukon gold potatoes halved
2 cups cherry tomatoes halved
1/2 red onion sliced
2 cups mozzarella balls
14 oz canned artichokes quartered
1/2 cup black olives
1/4 cup basil leaves

Dressing:
1/2 cup olive oil
4 tbsp red wine vinegar
2 tsp Dijon mustard
1/2 tsp salt
1/2 tsp pepper

Boil potatoes in a stockpot for 8-10 minutes. Drain potatoes and let cool for 30 minutes. Whisk together dressing ingredients. In a large bowl, combine potatoes with all ingredients and toss with dressing. Add salt and pepper to taste. Serve at room temperature or slightly chilled.

New at Marcel’s! We are thrilled with these Larch wood cutting boards that just came in! They are meticulously handmade using Eastern Canadian larch by local craftspeople. The durable, self-healing, end grain construction of the Larch Wood board provides a smooth, impact-resistant, cutting action that is kind to knives. Each board is uniquely and carefully crafted into a piece of functional art.

The boards are just as wonderful to look at as they are to work on!

Jill Foucré, a longtime resident of Glen Ellyn, has realized her lifelong dream to combine her family heritage, her love of cooking and entertaining, and her highly successful business skills into a retail and cooking school destination.
