Following my last salad pick up date yesterday, I’d like to say thank you to everyone who ordered from me, interacted w my posts on social media, and shared their experience with others. Update to Main Street Salad Co. I have recently accepted a full time position that will be taking me away from Main Street Salads and wanted to let you the following updates in my transition out of it for now. I will not have a Friday pick up this week and next Tuesday will be the last salad pick up date for salads only. No soup next week. I am so grateful for everyone who embraced my community offerings especially because it came at a time that felt so uncertain and unfamiliar. This was an opportunity that I hope to pick back up one day but for now I'm off to work for the first time in 18 months and I'm pretty excited about it. I also enrolled in my first semester at Parkland College in January so life is full of exciting new changes. Wish me luck and I hope to reengage with you all at another time!

Next Tuesday don’t miss out on the French onion soup! I am doing a collaboration with Toohill Seed & Beef Service. To make the perfect stock for this soup, I’m using beef bones from Toohill. A good stock is what gives this soup its personality. Caramelized onions, fresh thyme, and rich stock will make anyone a believer who say they don’t like onions.

This soup will continue to be a gluten free/dairy free option so it will not have a cheesy crouton on top. You can certainly grab your favorite bread, a beautiful cheese like Gruyère or Swiss, and toss it under the broiler to have restaurant quality and convenience at home.

Here’s the run down on what I offer, when it’s available, and how to order.

I offer to go salad kit that comes in 2 varieties. A house salad kit which includes romaine, cucumber, grape tomatoes, and green onion. You can choose ranch or a house made red wine vinaigrette for your dressing. This salad comes with freshly shredded Colby cheese and house made garlic croutons served on the side.

The second option is a Caesar salad kit that comes with chopped romaine and served on the side is shredded Parmesan cheese, Caesar dressing, and house made garlic croutons.

These salad kits are available for pick up in Clinton, Il on Tuesdays and Fridays from 4:30-5:30 every week.

As a special, I am running quarts of soup that are available on Tuesdays only through the end of March. The soup changes each week but I have all the dates and varieties listed on my website as well as a Facebook post that should be easy to find.

The soup of the week is a vegetable and wild rice soup with turmeric. Turmeric is a powerful ingredient that fights inflammation in the body and is very mild in taste. Teaming up with fresh carrots, celery, zucchini, and bell peppers makes this a flavorful and hearty soup.

Caesar salad and house salad kits are also available on Tuesday. All salad kits come with house made croutons, dressing, and freshly shredded cheese!

New Soup Menu Drop ⤵️

Before I get to the soup content, just some friendly reminders.
1. All soups are gluten free/dairy free/and usually vegan. This gives anyone who is suffering from allergies, intolerances, or alternative lifestyles to be included in the fun and joy of eating. I will be making a very exciting exception on one of the soups so…stay tuned. 👀
2. I only offer soup on Tuesdays and the offering changes from week to week. I make everything from scratch so to maintain integrity of the product offered I chose to be a little selective and only offer one per week.

Soup is under way. When I say it’s fresh, it’s fresh baby!

Tomorrow is a soup and salad pick up day! The soup tomorrow is a Roasted Red Pepper Bisque. This soup is dairy free, gluten free, and vegan. It will contain a cashew cream instead of dairy based cream so if you have an allergy please be aware. Soup is $15/quart.

As always, every Tuesday and Friday, I have house salad and Caesar salad to go kits. These are a great base layer to add your own proteins or favorite salad toppings to but are also so good on their own. Perfect for meal prep or makes a great family side.

Beat the January doom and gloom and pre-order soup for next Tuesday’s dinner! Tuscan White Bean and Kale is up next. It’s nutrient dense and is a great source of protein. It’s made with a rich tomato broth and fresh basil provides a fun pop of flavor.

Soup and salad pick ups were postponed to today due to weather but had a great start to the week regardless. Today’s soup was Creamy Roasted Garlic and Cauliflower and has been my favorite so far. It’s loaded with rich prebiotics from loads of shallots, onions, and roasted garlic. It’s delicate and rich at the same time with no cream, no thickeners, just whole foods.

The next pick up day is Friday for salads. I have house salads and Caesar salads. They feed a family of 4 for a nice side salad or great for meal prep.

I want to make a former introduction about who I am and why I started the Main Street Salad Co. as it seems to be growing and evolving over the last few months. I have been working as a chef for over 15 years. I began my health food journey while living in Scottsdale, AZ going to culinary school and enjoying the fresh foods and produce the area had to offer almost 20 years ago. I have the advantage of product knowledge that allows me to easily navigate the shelves of a supermarket in a time where healthy food choices can feel like a challenge. I feel for good produce and know how to handle it once it comes home with me. This is something I see a lot of folks struggle with. Whether it’s what to choose, how to store it, the time for chopping and prepping, organic vs non organic, the choices feel hard. Oh, and I also developed a few food intolerances from an autoimmune disorder about 6 years ago, another thing that feels hard to navigate in this area.

All that to say, I am taking my experience and am now offering the Clinton area fresh, to-go salad kits on Tuesdays and Fridays. Soups that are gluten free, dairy free, and meat free will be available once a week during the winter months. Soup pick ups are also on Tuesdays.

My concepts are simple and affordable and also are inclusive for anyone suffering from dietary restrictions. Whatever your reason for picking up any of my products, they are designed to take the stress out of eating good food. There is so much conversation around the connection between gut health and mental health. For those curious of how to make gradual changes to your diet to improve overall health, this may be an easy area to start. If I’m going to use oil cooking on a daily basis, I make sure it’s not just functional but is adding hearty healthy, monosaturated fats that contribute to brain health and are anti inflammatory. These are the oils I’m currently using in my house.

To sear, grill, or stir fry I use the avocado blend because if it’s smoke point.

If I’m not cooking with it and will be making a salad dressing or finishing a vegetable side dish, sauce, or soup I use extra virgin olive oil.
