Did someone say ‘fajitas’??
Just two chicken breasts sliced thinly and tossed in cumin powder, smoked paprika, coriander and chilli to taste…
Heat a grill pan on high and add a splash of water - when the water starts to sizzle you know it is hot enough to add the chicken… toss and stir across the pan to cook evenly on all sides - add a cup of water and toss, cover with a lid and let steam…
Meanwhile make your guacamole with one or two ripe avocados squashed with two cloves crushed garlic, juice and rind of one lime, tsp coriander powder, half chopped red onion and a chopped small tomato. Fresh coriander chopped finely suits this well.
Go back to give your chicken a bit of a stir and add mushrooms and capsicum if you wish… cover and lower heat for another few minutes.
Wash and shred some lettuce leaves and grate some cheese - we like goats cheese because we are lactose intolerant - but any cheese you like will do…
Heat your tortillas of choice and serve! I usually place all ingredients on the table so people can build their own 😊

Just a little bit of homemade Larb Gai… I minced three chicken breasts with ginger root and black peppercorns then steamed the mix with coriander powder, lemongrass and galangal powder…
….steamed some white rice and green beans,
….air fried some kale
…..and once the chicken and herb mix was cooked through I added it to a bowl of lime juice and rind, fish sauce, sugar and some fresh chilli…
Serve with lettuce, coriander and red onion and some fried shallots ☺️
