Tonight's dinner...oh so yummy! I seasoned the chicken and sweet potatoes with olive oil, garlic, rosemary, and thyme and baked it for 25 minutes at 425 degrees. Then added peas, and quinoa with kale and red beans to finish off the dish.

Superfood Taco Bowl

Taco Bowl Ingredients:

Taco Meat:
1 lb. organic grass-fed beef
1 Tbsp. apple cider vinegar
1.5 Tbsp. chili powder
1 tsp. garlic powder
½ tsp. cumin
½ tsp. paprika dash of salt

Bowl:
Taco Meat
2 cups cooked brown rice + pearled cauliflower (cilantro & lime)
2 cups raw kale
1 avocado, diced
1 cup black beans
1 cup diced tomatoes
½ cup salsa

Instructions:
Preheat skillet to medium/high heat.
Cook ground beef and stir continuously until slightly browned.
Add in apple cider vinegar and spices and continue cooking & stirring until fully cooked.
When the beef is cooked, separate it out into 4 servings.
Add in cooked brown cauliflower rice, raw kale, diced avocado, black beans, diced tomatoes, and 2 Tbsp. salsa to each bowl.
Serve & enjoy!

-Tomato Sauce (in salsa): rich in lycopene (powerful antioxidant)
-Avocado: rich in vitamin K, B6, C and folate, high in fiber
