Foggy Mountain Pasta
Artisan hand made pasta from local organic ingredients
One of our pasta machines may have a serious mechanical issue. Sooooo, that means the other has to carry the weight. No problem there. But it also means we need to split the production. So I get to kill and make today!
Although it appears we have 14 children living in this house, it is actually just three.
We are sorry to not be at markets today. We look forward to being back next week.
Good thing I’m getting my eyes checked this week! We misprinted the use and freeze by date on the bucatini for sale at markets this weekend. The date is 1/26/23.

Here is our pasta line up for this weekend - September 10 and 11:
1. Spelt Gnocchi Sardi / Malloreddus - Spelt makes this pasta nutty and flavorful while also being light because there are no eggs in this blend. Perfect for summer dishes with fresh tomatoes or go the gamut with sausages and mushrooms.
2. Grano di Inverno Lumache - This VA grown and milled blend makes pasta that is wonderfully rich with a browned butter flavor while having awesome chew, Luamche means snail but there are no snails in this pasta, only awesomeness! Perfect for lunch meals and easy school night dinners.
3. Harrsi Flour Bucatini - Sustainably gown and milled, Harris wheat is a naturally white wheat that gives our bucatini a wonderful velvety richness. Have it a Sunday sauce or just a bit of parmesan and olive oil - either way is good with us!
