TURKEY DROP!! IN APRIL!

Our fuzzy little turkeys arrived today. They're so adorable at this age. You should really consider coming out to the farm and meeting them. They'll develop little personalities and we will be able to gobble back and forth with them as they grow.

Now on to the business end of it all. Now is the time to order your Thanksgiving or Christmas turkey! We will be having processing dates mid-November and mid-December for your holiday meals. Fresh - not frozen - turkey for your big day! They are so delicious and always a huge hit at every table. Act fast, we have a limited number available.

It's that time of year again! Time to order your bacon seeds!

We're again raising pigs for all your pork chop and bacon desires.

How does it work? You contact me (Farmer Uncle Mike) and place a $200 deposit for a whole hog. Then, we raise and care for a pig just for you. It takes several months to grow to butcher size. Usually about October. Our pigs are raised on a rotational paddock style pasture where they get fresh soil and a new home on a regular basis. This makes for a happy healthy hog for you. Once we have sent the hog to process, the remainder of our agreed cost will be paid and you will be put into contact with our USDA processor. From there, you specify what you would like, how you want it cut and if you'd like any post processes like smoking or seasoning. You pay them directly based on the hogs weight. Then, we'll arrange with you how you're going to receive the product. Make sure you have enough freezer space to hold about 250lbs of meat! That's it - fresh pork for a year!

My son brought home (from college for Christmas break) some extra store eggs be had. Can you spot the difference?

Cage-Free: This term means that the hens are not kept in cages, but it doesn’t mean they’re clucking around in the fresh air and sunshine. They can be kept indoors, often in crowded conditions.

Store-bought eggs are usually laid by hens confined to cages or in large confined barns (cage-free) never seeing the sun, which means no Vitamin D in store-bought eggs. When compared to store-bought eggs, local farm eggs are richer in color, yolk density, freshness, and shell thickness. Nutrient dense eggs will also have a darker yolk and a richer flavor.

The difference between washed vs. unwashed eggs:

Before a hen lays an egg, her body creates a protective layer called the "bloom" over the shell. The bloom protects the egg from any bacteria getting inside by sealing the 6,000-8,000 shell pores.

Large commercial egg producers spray their eggs with a chemical sanitizer before they package them to reduce the risk of bacteria like salmonella contaminating the egg. When eggs are washed, the "bloom" is removed, leaving the egg pores open to potential new bacteria. Without that protective layer, it's recommended that you refrigerate washed eggs at a temperature around 45 degrees to prevent any bacteria growth.

If eggs are left unwashed with the bloom intact, you can place them on your kitchen counter. Unwashed, room temperature eggs can be kept for about two weeks. If you aren't planning to eat your eggs for a while, we recommend refrigerating them. The cooler temperatures increase the shelf life, with eggs keeping for up to three months in the refrigerator.

The eggs we sell are unwashed, which means that the bloom is still intact, and you can store them on your counter or in your refrigerator.

This time of year, our chickens go through a natural change preparing for winter life. This drastically reduces their laying and shorts production for a time. We're ok with them getting a break for sure! Be patient. They will be laying soon!

I had a call this morning from a wonderful lady that purchased one of our turkeys from Mert's Specialty Meats. She wanted some cooking tips for our fresh turkey. It got me thinking that maybe some of you would also like our thoughts on this.

We have had very good success with ours at home and hope you do too!This is not a recipe, just our recommendations.

We like to set our oven @ 325° and roast breast down in a roasting pan and then flip halfway through, paying attention to the internal temperature. 165° in the breast and 175° in the thigh. Our turkey is cooked with an empty cavity with butter and seasoning tucked under the skin in a lot of places. There are no injected plumping agents so these fresh pasture birds cook quicker than most store bought birds.

Prep: 15 minutes.
Spatchcock a whole chicken
Cover with your favorite rub
Chop up some root vegetables
Sprinkle with olive oil
Salt & pepper

Place it all on a parchment lined cookie sheet and bake for 45 minutes @ 425° or until internal temperature is above 165°

Yum.
