We had so much fun making our own pizzas the other night with my nephews that these were the only pictures I got. They got to be fancy and drink their root beer out of wine glasses. The last picture is my pizza bowl.

This past week I was home by myself for dinner most nights and I wanted something quick and easy but also satisfying. I was craving Asian food so I whipped up this 5 ingredient meal.

2 med chicken breasts diced small
Low Sodium Soy Sauce or Liquid Aminos
Toasted Sesame Oil (way better than regular)
Coleslaw Mix
Garlic

Dice chicken breasts into small bite-size pieces. Heat skillet over medium heat. Add half the diced chicken to the skillet with 2 tablespoons of toasted sesame oil and 4 tablespoons of low sodium soy sauce. Cook until golden brown and cooked all the way through, approximately 10 to 12 minutes. Remove from the pan and add the remaining chicken with 2 tablespoons of toasted sesame oil and 4 tablespoons of low sodium soy sauce. Cook for approximately 10-12 minutes then remove from pan. Add coleslaw mix to the pan with 1 tbsp garlic powder, 4 tbsp low sodium soy sauce and 2 tbsp toasted sesame oil. Cook until slaw has wilted then add the chicken back and mix. This provided 4 servings.

You can add other veggies if you want. I love adding fresh ginger but was out. Adjust seasonings to your preference.

Sleepovers = Pizza Night!! What does Pizza Night at your house look like? šŸ•šŸšŸ«‘šŸ«’šŸ§„šŸ„“šŸ§€šŸ„«šŸ„¦šŸ†

The portobello mushrooms and pizza crust turned out nice and crispy thanks to my Pampered Chef Pizza Stones. They help to pull the moisture away from foods helping to make them extra crispy.

I didnā€™t get many pictures of the girlsā€™ pizzas because they cut them and ate as soon as it came out of the oven. I made mine using portobello mushroom caps as the crust and they were sooo good! The key to doing this is cooking the mushrooms first to release the juice.

I topped one with pesto, pepperoni, peppers and mozzarella and the other with tomatoe sauce, ham, pineapple and mozzarella. Are you a fan of tomato sauce, or do you prefer pesto on your pizza?

Why do Southerners eat Black Eyed Peas on New Yearā€™s Day?

The story of the Southern tradition of eating black-eyed peas as the first meal on New Year's Day is generally believed to date back to the winter of 1864 - 1865.
When Union General William T. Sherman led his invading troops on their destructive march through Georgia, the fields of black-eyed peas were largely left untouched because they were deemed fit only for animals.
The Union foragers took everything, plundered the land, and left what they could not take, burning or in shambles.
But two things did remain, the lowly peas and good Olā€™ Southern salted pork.
As a result, the humble yet nourishing black-eyed peas saved surviving Southerners - mainly women, children, elderly and the disabled veterans of the Confederate army - from mass starvation and were thereafter regarded as a symbol of good luck.
The peas are said to represent good fortune. Certainly the starving Southern families and soldiers were fortunate to have those meager supplies.
According to the tradition and folklore, the peas are served with several other dishes that symbolically represent good fortune, health, wealth, and prosperity in the coming year.
Some folks still traditionally cook the black-eyed peas with a silver dime in the pot as a symbol of good fortune.
Greens represent wealth and paper money. Any greens will do, but in the South the most popular are collards, mustard greens, turnip greens, and cabbage.
Cornbread - a regular staple among Southerners in the absence of wheat - symbolizes gold and is very good for soaking up the juice from the greens on the plate.
You should always have some cornbread on hand in your kitchen anyway. Good for dinner and in the morning with syrup.
Pork symbolizes bountiful prosperity, and then progressing into the year ahead. Ham and hog jowls are typical with the New Year meal, though sometimes bacon will be used, too. Pigs root forward, so itā€™s the symbolic moving forward for the New Year.
Tomatoes are often eaten with this meal as well. They represent health and wealth.
So reflect on those stories when you sit down at your family table and enjoy this humble, uniquely Southern meal every New Yearā€™s Day. Be thankful for what this year did give you in spite of the bad, and hope and pray for better days that are coming ahead for you.

Weā€™ve been on and off plan with Trim Healrhy Mam for nearly 6 yearsā€¦..mostly off plan lately. Today was a re-start day that ended with this delicious dinner. We tried the Princess Taters for the first time and they were delicious, we will definitely make them again.

I am super blessed because Iā€™ve always been the menu planner, grocery shopper and primary cook meal prepper. This week Adam did all the planning and has prepped and cooked all the meals so far.

Dinner: banging ranch chicken thighs, princess taters and black garlic asparagus.

One thing I love about the holidays is Eggnog and this recipe is so good! Homemade eggnog is really very easy. If thereā€™s no rum, itā€™s just Christmas custard.

This is a 10/10! This warm Enchilada Soup from Mrs. Criddles Kitchen is always a hit. This time I used leftover finely shredded chicken, chipotle seasoning for some spice and added a bag of cauliflower rice. We sprinkled a little cheese and sour cream on top.

I sautĆ©ed the onion and garlic in my Pampered Chef Deluxe Multicooker, added alp the other ingredients set it to custom for 5 minutes and washed some dishes while it ā€œcookedā€. I say ā€œcookedā€ because the chicken was pre-cooked.
