My sis grew amazing, super-sized zucchini in her garden, so, of course, we had to make my famous Zucchini Bread!
We also did a bunch of cooking projects with the kids. They had a ton of fun helping and learning.

GREEN EGGS?! Oh no!!!!
Ever catered a breakfast event, and your fluffy yellow eggs turned green on the bottom while you held them in the chafing pan?
Ugh. Me too!
And while the Dr. Seuss book is fun... in real life "Green Eggs and Ham" is not really that funny. As a caterer, it is embarrassing....
And while it is SAFE to eat (as it is just a chemical reaction between the sulfur in the whites and the iron in the yolks) it certainly looks unappetizing.
So, here are three tips I've learned (the hard way) over the years for keeping your eggs bright and yellow while you hold them over the heat.
1. Add a bit of citric acid to your raw eggs before cooking them, like lemon juice (about 1 T. for every dozen eggs)
2. Use liquid eggs. They already have citric acid added.
3. Add a little sour cream at the end of the cooking process. This cools down the eggs and stops the cooking process. And... sour cream actually contains citric acid.
*A couple other helpful hints... avoid cooking with aluminum pans, and certainly use the freshest eggs possible.
Hope that helps!
Just a reminder that the holidays are coming... Have you hired a caterer yet for your seasonal party?
