BAKED RANCH ZUCCHINI FRIES
Back at the Ranch Dip Mix
2 large zucchini
1 cup panko bread crumbs
1 cup grated parmesan
3 large eggs beaten
1 Tbs olive oil
Line a large baking sheet with parchment paper and drizzle with olive oil.
Cut the zucchini into approximately 3" fries. Add the beaten eggs to a small bowl. In another dish (a loaf pan works well) combine the panko, parmesan, and Ranch Dip Mix.
Dip each fry into the egg and then the panko mixture. Place on pan leaving space between each piece. Drizzle with olive oil and bake in a 450° oven for 18-20 minutes or until golden and crispy. Serve immediately!
Tip: Our other dip mixes like Fiesta Ranchero make the perfect dipping sauce! You can make these in the air fryer too. Cut baking time to approximately 10 mins.

Jalapeno Jack Cheeseball Mix
8 - 8" flour tortillas
2 cups cooked, shredded chicken
2 cups Monterey Jack cheese
8 oz cream cheese
3 Tbs butter
1 Tbs flour
1 cup heavy cream
1 cup sour cream
Grease a 9x13 pan. Mix Cheeseball Topping packet (Mix pkg used later), chicken, 1 cup cheese and cream cheese.
Divide mixture evenly between tortillas (approximately 1/3 cup each) and roll them up, place in pan.
In a saucepan over medium heat, melt butter, stir in flour and cook for 1 minute. Add cream and Cheeseball Mix packet, bring to a boil to thicken.
Remove from heat and stir in sour cream until smooth. Pour mixture over tortillas and bake in a 350° for 10 minutes or until the center is hot.
Remove from oven and top with remaining cup of cheese. Return to oven and cook for approximately 5 minutes or until cheese is melted and begins to brown. Serve hot!

Here’s what you need:
Spinach Parmesan Hot Dip Mix
8oz cream cheese
1/2 cup sour cream
Combine mix with cream cheese and sour cream in small pan over low heat. Stir until warm and thorough combined.
Tip: For a great presentation, put prepared dip in an oven proof dish, sprinkle with shredded cheese and put under broiler just until cheese is melted. Serve warm with crackers or toasts.

Sweet Cheeseball Mix of choice
8 oz cream cheese
1 cup crushed chocolate sandwich cookies
Combine room temperature cream cheese with cheeseball mix and set aside.
Place crushed sandwich cookies into the bottom of several small dessert cups or glasses. Top with cream cheese mixture. Then, sprinkle with the cookie topping.
Optional: Add gummy worms and white sandwich cookies to create the graveyard effect. We used and edible marker to draw "RIP" on each cookie.
