Little T American Baker

We've been waiting to share some big, scary, and exciting news, folks. Our founder Tim Healea has passed the reins of this beloved bakery to longtime former employee and head baker, Dillon DeBauche.

This means some changes ahead, but the goals are the same: make the best bread and pastry using equal parts care and fun. We'll be introducing new products and fun seasonal experiments, but keeping many of our favorites. We’re the same people, making the things we want to share with you.

Don't worry - Tim is still a SE Portland neighbor and a loyal regular of the bakery. We are honored by his trust and grateful for this opportunity to keep feeding our community.

For those who don't know Dillon - hi there. I've been a part of Portland's baking scene for 20 years, and was the head baker here for nearly 10 years before taking an educational opportunity in R&D at Camas Country Mill. If you're a regular, you've probably had something I've made.

Thanks to everyone who braved the snow and came in today. We have decided we will be CLOSED on Friday, February 24 to let the roads improve before we get back to baking. Sorry for any inconvenience. Please be safe out there!

Happy Snow Day Portland! We are OPEN today, Thursday February 23, for bread, pastries and coffee so come visit us 8am-2pm. No sandwiches today but we’ve got plenty of treats to fill you up!

Happy Holidays to all our friends! We will be closed tomorrow due to the anticipated ice storm, and it’s not looking great for Saturday morning either. Please come by today if you need any baked treats before Christmas, and check back on Saturday for any last minute updates. Stay warm and have a wonderful holiday!

Our oven is repaired so we will be open tomorrow Thanksgiving morning as planned from 8am-noon. Then back to our normal schedule. Thanks again for all the messages of love and support! Happy Thanksgiving!

Quick update: we will continue to be closed on Tuesday and Wednesday this week, but we’re hoping to have our deck oven repaired in time for Thanksgiving morning. If all goes well, we’ll be open 8-noon this Thursday. Thanks everyone for your kind messages and thoughts! We really appreciate the support!
