The Great Flood 💔

Dear Community, Friends & Family,

Asheville and our region have been devastated by floods from Hurricane Helene. It is heartbreaking to see lives, livelihoods, businesses, and homes destroyed by this catastrophic event.

The French Broad River is our namesake, and our Chocolate Factory stands across the street from its banks. This week's flooding of our river is historic, breaking records at 24.67 feet high, beating the previous record of 23.1 feet during The Great Flood of 1916.

Dan and I, along with our son, Max watched in horror as cars and telephone poles floated by on our street, Riverside Drive, and began to lap at the front door of our Chocolate Factory. Fortunately, our team's preparation in sandbagging the front door prevented most of the water from breaching the door. As you can see from this photo of the aftermath, the water rose to 39" up our front door.

As we remove debris and assess the damages, it has become clear that critical utility infrastructure must be restored before we can start making chocolate again.

Many communities are without power, water, access to food, gas, and roads. Lots of our friends and neighbors have evacuated for safety. We've got a long hard road ahead of us. But I believe in our resilience and creativity.

We worked with two microbiologists at Clemson to assist them in collecting water from Bulls Bay for another project. In return we were supplied with the "Sea water results from the Agricultural Lab". Here are the results for anyone who wants to nerd out on basic chemistry analysis. High fives to all that live around and protect our waterways! I've attached a link of the periodic table in case anyone needs a cheat sheet :)

🧂 Our favorite salt to put in our new handmade ceramic Salt Pinches is Carolina Flake from . They extract their saltwater harvest from Bulls Bay, South Carolina, located within the protected wilderness area known as Cape Romain National Wildlife Refuge. The water is moved to their homestead where it it goes through an evaporation process in their solar tunnel, and the resulting salt is sifted and packaged.

🧂 Flake salt is thinner and larger than regular salt crystals resulting in more surface area which makes the salt light and fluffy with a quick pop of saltiness and a satisfying crunch.

This recipe comes from Jon Jackson at Comfort Farms in Milledgeville, Georgia, and is using the Motherland Okra variety.

Roasting okra is a delicate process that starts with the perfectly picked pod. Squeeze the tip of the okra pod, and if it’s tender to the touch it’s ready to harvest. Or, if you like, eat it raw, taking note of its size and tenderness, and then pick within that range. Motherland okra has a beautiful floral note that carries the flavor of the flower from which it was borne. Be careful not to pick it too early, though; that will slow down pod production.

In optimal conditions, Motherland okra will reach heights of 15 feet! To reach the okra pods just gently pull the trunk toward the ground without breaking it, and use sharp scissors to harvest the pods.

𝐑𝐨𝐚𝐬𝐭𝐞𝐝 𝐎𝐤𝐫𝐚 𝐰𝐢𝐭𝐡 𝐙𝐞𝐬𝐭𝐲 𝐃𝐢𝐩𝐩𝐢𝐧𝐠 𝐒𝐚𝐮𝐜𝐞
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒
1 lb. fresh okra (all of similar size)
3 T. olive oil
1 t. smoked salt, such as Bourbon Barrel Smoked Flake from Bulls Bay Salt Works
1/2 t. black pepper

𝐈𝐍𝐒𝐓𝐑𝐔𝐂𝐓𝐈𝐎𝐍𝐒
1. Split the okra in half longways. Place it in a one-gallon zip-close bag with the other ingredients, then shake the bag until the okra is covered with the seasoning and oil.
2. Preheat the oven to broil.
3. Place the Motherland okra on a baking sheet and roast until you achieve the perfect char without burning it. Throughout African indigenous culture, the art of char is important for open-fire cooking, as it signifies that the food is cooked thoroughly. Africans avoid eating anything raw. Because living in the bush is a tough life and disease is rampant, stewing and roasting food is essential to prevent food-borne illnesses.

𝐙𝐄𝐒𝐓𝐘 𝐆𝐀𝐑𝐋𝐈𝐂 𝐌𝐀𝐘𝐎 𝐝𝐢𝐩𝐩𝐢𝐧𝐠 𝐬𝐚𝐮𝐜𝐞
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒
2 large cloves (or 4 small cloves) garlic, roasted and mashed
1/3 c.regular or vegan mayonnaise (Jon uses Duke’s mayo)
2 T. freshly squeezed lemon juice
1/2 t. dijon mustard
1/2 t. coarse salt, such as Bulls Bay Salt Works Red Mash salt
Black pepper to taste

𝐈𝐍𝐒𝐓𝐑𝐔𝐂𝐓𝐈𝐎𝐍𝐒
Combine all ingredients and whip together for a wonderful dipping sauce.
