Simple and light with a touch of citrus

I sautΓ©ed sliced zucchini (without oil-start with a HOT πŸ”₯ saute pan and keep broth or water nearby to prevent sticking- works very well!).

When the zucchini is browned to your preference, add some fresh thyme and lemon juice to the pan for just a few minutes to allow the flavors to meld.

Serve and enjoy! Add more lemon or thyme if you wish.

This is a great salt free dish as well if you are trying to reduce your salt intake! The citrus β€œfools” your taste buds into believing that you taste salt!

This pairs well with Cashew Alfredo pasta 🍝over a baked potato πŸ₯” or served on it’s own! It will be a great way to use use zucchini once those harvests begin!

Welllll….the best laid plans….

I was attempting to make a rice paper pancake (oil free) using the beautiful oyster mushrooms.

I’m not certain what happened, maybe my pan wasn’t hot enough? It just turned into a mushed mess! 🀣
It still tasted good though.

Maybe I’ll try smaller dumplings and use the air fryer.

Don’t let recipe mishaps get you down, if you like all of the ingredients you’re using, it will most likely taste good! Not every recipe turns out β€œpicture perfect”.

The health benefits of mushrooms
according to Nutritionfacts.org include:

Mushrooms contain an amino acid called Ergothioneine. This amino acid can only be found in mushrooms.

β€œOf more than a hundred compounds measured in the bloodstreams of thousands of individuals, the one most associated with the lowest rates of disease and death was ergothioneine. Higher blood levels were associated with lower risk of heart disease, stroke, and death from all causes put together over a period of more than 20 years.”

β€œ Low blood levels of ergothioneine are correlated with increased risk of frailty, cardiovascular disease, cognitive impairment, dementia, and Parkinson’s disease”

Rhubarb Pizza! πŸ•

I refined the original recipe by replacing dairy products with cashew Alfredo and cashew Mozzarella, creating an oil-free version by sautΓ©ing rhubarb and onions in a dry pan.

Give it a try! It's a savory pizza worth exploring.

When life gives you cauliflower……

Freeze it! In this case I blanched it before freezing on a cookie tray. I will then vacuum seal it in smaller packages.

Ways to use cauliflower to bump up nutrient density-

πŸ₯€Add to smoothies (no one will know!)

🍝 Addto sauces, soups, stews or chili

πŸ₯” Add it to mashed potatoes and serve over a bed of arugula (my fav!)

Or just use it as a side!

It is low calorie and is rich in nutrients, including dietary fiber, vitamin C, vitamin K, vitamin B6, and folate

Eat more cauliflower!
