I’m enjoying National Ice Cream Day with my MAPLEDOODLE ICE CREAM SANDWICH!
I take two of my giant size mapledoodles and fill with Aldens organic vanilla bean ice cream. It is one of my very favorite treats all year round. (Usually at 2:00 a.m.)
Seriously.

CHOCOLATE OATMEAL PEANUT BUTTER BARS
WHITE CHOCOLATE RASPBERRY TARTS
This looks perfect, right? Well, truth be told, I did not set out to make a white chocolate raspberry tart. My intention was to make a raspberry tart. My raspberry curd did not set up properly. But, still tasted fantastic. What I decided to do was make a white chocolate ganache. I filled the tart shell with the ganache and Then swirled in the raspberry curd. Once set, I topped with my fresh raspberries and a little bit of gold leaf.
What’s nice is that I did not have to throw away my raspberry curd and start again. And, I still ended up with a great little tart!
MARDI GRAS SUGAR COOKIES
KINGS CAKE for FAT TUESDAY!
This is my first time baking this type of Mardi Gras cake. It is a yeasted cake, and it’s certainly a labor of love. It took me all day yesterday to bake two Kings cakes. The only downside is that I donated these cakes. I am going to have to make another cake over the next couple of weeks so that I can taste one!

WHITE CHOCOLATE BISCOFF PRETZEL BARS from
I’m not even sure of the name, but, am definitely dazzled by the taste! Thank goodness I’m gifting these to someone tomorrow or I’d be in trouble. The cookie base is white chocolate, crushed Biscoff cookies, pretzels, blister peanuts and Biscoff spread. The top is melted milk chocolate, a little coconut oil and creamy Biscoff garnished with a little pink Himalayan salt and pretzel shards. Come on now……

KEY LIME PIE
My Key Lime Pie is creamy, smooth, tart, sweet and crunchy from the graham cracker crust. Topped with Chantilly Cream with a splash of lime juice, garnished with candied lemon.
BTW- candied limes turn brown and unattractive. The rind gets super bitter.
LEMON SHORTBREAD COOKIES
My lemon shortbread cookies are buttery, crisp, and tart with a sandy, crumbly texture that melts on your tongue. 🍋
PISTACHIO COOKIES
These pistachio cookies are so buttery, crumbly and nutty. Think Russian tea cakes or Mexican wedding cookies made with Pistachios. The kicker with these delightful gems is the brown butter icing on top. 👏

FRESH LEMON SHORTBREAD COOKIES
My PEANUT BUTTER COOKIES are thick, soft and melt in your mouth. No skimping on the peanut butter flavor either, I use two cups per batch! These are sprinkled with turbinado sugar for a little crunch.

There aren’t many people I know that don’t like chocolate chip cookies. Mine are thick, fat, crunchy on the outside with a just baked center (more on the cookie dough side). It’s hard to eat just one!
TRIPLE CHOCOLATE ESPRESSO MOUSSE CAKE from . You can’t pass this up. Chocolate cake base with a chocolate espresso mousse (vegan) middle topped with dark chocolate mixed w/ almond butter (garnished with dried flowers). You would never believe there is no refined sugar in this recipe!
