The use of Cement or mud set and Thinset on a Tile installation will avoid highs and lows and many tile installation issues. Maybe it will be a little bit costly For labor and materials because 2 different mixes will have to be made to install a piece of Tile but it will avoid unlevel situations and hollow pieces since sometimes you need to follow the floor that is not so perfect in South Florida and you can not go very high using thinset only.
A Good Installer will guide you and explain in advance all the different processes, issues and what to expect going either way.
