It’s finally soup weather. 2 pots of stock started for my soup base.
A yummy birthday dinner with my favorite guy! Couscous with currants and sliced almonds, lemon marinated scallops and steamed asparagus. He was very happy!
I am so proud of this guy! We were told he might never talk and even if he said “I love you” he probably wouldn’t know what it meant. Well he talks and thinks and loves and now he teaches. He has been working with a student to make sourdough bread and several other recipes. I cannot believe how far has come. His future goals are working in the movie industry starting as a production assistant, he has his certificate as well as his degree (if anyone has an in let us know, not the easiest world to break into) driving more independently and a serious relationship (or at least some dating for now). The next goals are the most challenging but just like all of the others I know he will do it! Actually not just do it, but do it with hard work and determination. Love you sweet Nicholas (not Nick).
