Crispy fried chicken using our garlic scape powder—perfect for a Friday night! 🍗✨

Here’s how to make it:

1️⃣ Brine: Sauté scallions, garlic scape powder, and rosemary for 1 minute, then add water and lemon juice. Simmer until salt dissolves. Cool the brine and soak chicken pieces for 8-24 hours.
2️⃣ Prep: After brining, rinse and dry the chicken. For extra crispy skin, refrigerate uncovered for a few hours.
3️⃣ Fry: Mix flour, spices, and baking powder. Dredge chicken in seasoned flour, dip in “buttermilk” (milk + lemon + egg), then coat again in flour.
4️⃣ Cook: Fry at 350°F for 12-15 minutes until golden brown, then bake at 250°F for 10-15 minutes for that perfect crunch! 🔥

Take advantage of the last grilling days with this paella 🥘 Consider this “recipe” inspiration - interpret as you wish! ✨

- Warm some olive oil and add chorizo to a pan (look for a garlic free chorizo if you’re sensitive to fructans)
- Warm your Gourmend Broth
- Add chicken to pan and coat with the oil/chorizo fat
- Add bell peppers, green scallion tops, tomato paste and continue sautéing
- Add rice, stirring to coat
- Add the broth in a 4:1 ratio (4 part liquid to 1 part rice) and shake the pan to get everything nice and even. Do not stir or you’ll make the rice gummy
- Halfway through cooking you can add shellfish like shrimp, clams and mussels - shellfish can be cooked in the paella or separately like we did due to an allergy in our dinner group
- Let the liquid boil down and cook the rice, without stirring, turning the pan as needed to even out the heat
- Once you start hearing some crackling, you’re all set! This will leave some rice stuck to the bottom, forming a “socarrat”

Low FODMAP Gazpacho Recipe 🍅

Ingredients:
- 2 pounds ripe red or heirloom tomatoes, cored and roughly chopped
- 1 Cubanelle pepper (or other mild green pepper), cored, seeded, and roughly chopped
- 1 cucumber (about 8 inches long), peeled and roughly chopped
- 1 cup scallion greens (tops only)
- 1 tsp garlic chive powder
- 1 tsp green onion powder
- 2 tsp sherry vinegar
- 2 tsp salt
- ½ cup extra-virgin olive oil
- A small piece of stale sourdough bread (or toasted fresh sourdough), about 2 inches

Instructions:
1. Combine ingredients: In a blender, combine the tomatoes, pepper, cucumber, scallion tops, garlic chive powder, and green onion powder. Blend on high speed until smooth, for at least 2 minutes, occasionally pausing to scrape down the sides.
2. Add vinegar, salt & olive oil: With the motor running, add the sherry vinegar and salt. Slowly drizzle in the olive oil, continuing to blend. The mixture will turn a bright orange or dark pink and become emulsified, similar to a smooth salad dressing.
3. Thicken with bread: Gradually add small pieces of the stale or toasted sourdough bread to thicken the mixture. If it still seems too thin, drizzle in more olive oil or add more bread until the desired creamy texture is reached.
4. Strain: Strain the mixture through a fine mesh strainer or food mill, using a spatula or the back of a ladle to press the liquid through. Discard the remaining solids.
5. Chill: Transfer the strained gazpacho to a large pitcher (preferably glass) and refrigerate until thoroughly chilled, at least 6 hours or overnight.

Serve: Enjoy this refreshing gazpacho cold, garnished with extra diced cucumber, tomato, chives, and/or a drizzle of olive oil if desired.

1️⃣ Saute Gourmend Garlic Chive Powder in oil on medium-low heat for 30 seconds. Then add white wine and bring to a boil for 2 minutes. Add salt and red pepper flakes.

2️⃣ Set the heat to medium-high, add cleaned mussels to the pan, and cover. Once the mussels open (which should take just a few minutes), remove the lid.

3️⃣ Turn the heat to low and gently stir in butter and parsley. Remove the pan from heat after 1 minute.

4️⃣ Adjust salt and pepper to taste, and enjoy!

I don't know about you, but I'll eat anything crusted with Parmesan cheese. Try these Parmesan flounder fillets for a healthy, gut-friendly meal!

1️⃣ Preheat oven to 425, drizzle 2 tablespoons of oil on a large baking sheet, and season the flounder with salt and pepper.

2️⃣ On a large plate, combine Parmesan, bread crumbs, Gourmend Garlic Scape Powder, lemon zest, salt, and pepper. Dredge fish in bread crumb mixture, pressing to coat.

3️⃣ Place fish on the prepared baking sheet and drizzle with remaining 2 tablespoons of oil and lemon juice.

4️⃣ Bake until golden and fish flakes easily with a fork. Squeeze a bit more lemon on top and garnish with chopped parsley.

5️⃣ Enjoy!!

We just looked it up, and you can have an UNLIMITED amount of love on the low FODMAP diet. And money can't buy love...but it can buy Gourmend...and that's essentially the same thing 💚

Out of all of the superpowers we could have, we're glad that ours is allowing everyone to enjoy delicious, quality foods without digestive troubles. And we don't even have to wear tights or jump from building to building - neat!

Syrup: not just a breakfast condiment anymore! Put away the pancake and waffle mix and whip out the chicken thighs for this delicious maple chicken!

1️⃣ Whisk together soy sauce, oil, maple syrup, pepper, thyme, rosemary and Gourmend Garlic Scape Powder.

2️⃣ Pour marinade over chicken thighs in a large container and Turn chicken over to coat each piece.

3️⃣ Let chicken marinate for 30 minutes or more in the refrigerator.

4️⃣ Heat grill to medium-high heat. Place chicken on the grill over direct heat until char lines appear.

5️⃣ Move chicken to indirect heat (either a top rack or unheated side of the grill) to finish cooking, until the internal temperature of the chicken reaches 165°F, about 5-10 more minutes.

6️⃣ Remove chicken from the grill and serve!
