Coming to you with another perfect recipe for your 8x8! Let's dive into a taste of France with this French-style egg bake (or quiche)! Fresh herbs, savory bacon, and creamy Gruyère cheese come together in each delightful bite.

Who needs a trip to Provence when you have this slice of sunshine on your plate? (Well... we do love a vacay, but you get the idea...)

What you need:
1 refrigerated pie crust or homemade pie crust
6 large eggs
1 cup milk or heavy cream
1 cup shredded Gruyère cheese
1 cup diced ham or cooked bacon
1/2 cup diced onions
1/2 cup diced bell peppers (any color)
Salt and pepper to taste
Pinch of nutmeg (optional)
Sprinkle of chives (optional)

How to make it:
1. Preheat your oven to 375°F (190°C). Grease your 8x8 foil pan and line it with the pie crust, crimping the edges if desired.
2. In a large mixing bowl, whisk together the eggs and milk or heavy cream until well combined. Season with salt, pepper, and a pinch of nutmeg if using.
3. Stir in the shredded Gruyère cheese, diced ham or bacon, diced onions, and diced bell peppers until evenly distributed.
4. Pour the egg mixture into the prepared pie crust, spreading it out evenly with a spatula.
5. Top with chives. (optional)
6. Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown.
7. Once done, remove the French-style egg bake from the oven and let it cool for a few minutes before slicing and serving.
8. Enjoy your delicious French-style egg bake warm or at room temperature, either as a main dish for brunch or a light dinner, accompanied by a fresh green salad.

Cowboy Caviar Dip - What you need:

1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) black-eyed peas, drained and rinsed
1 bag frozen corn
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1/2 red onion, finely diced
1 jalapeño pepper, seeded and finely diced
1/4 cup chopped fresh cilantro
1 avocado, diced
Juice of 2 limes
2 tablespoons olive oil
Salt and pepper to taste

How to do it:

1. In a large bowl, combine the black beans, black-eyed peas, corn, diced bell peppers, red onion, jalapeño pepper, and chopped cilantro.

2. Gently fold in the diced avocado, being careful not to mash it too much.

3. In a small bowl, whisk together the lime juice, olive oil. Season with salt and pepper to taste.

4. Pour the dressing over the bean and vegetable mixture and toss gently to coat everything evenly.

5. Transfer it into your Fancy Panz and refrigerate the Cowboy Caviar for at least 30 minutes to allow the flavors to meld together. Use a Premium style pan for cool pack compatibility!

BONUS! Before serving, give the Cowboy Caviar a final stir and adjust seasoning if necessary - maybe top it off with some more cilantro! Serve with tortilla chips or as a topping for tacos, salads, or grilled meats.

🧡Penne Wise Pumpkin Pasta Recipe🧡
Easy to make, easy to enjoy and easy clean up- that's when Fancy Panz steps in!
It's a family favorite, but credit goes to the queen of 30 min. meals, Rachael Ray Show! I did make a few tweaks of my own though!
Ingredients:
1 pound penne pasta
1 pound turkey or pork sausage (optional)
2 tablespoons olive oil
2-3 finely chopped shallots
3-4 minced garlic cloves
2 cups chicken stock (I use 1 c. stock and 1 c. white wine)
½ cup cream
1 (15 ounce) can pumpkin puree (NOT PUMPKIN PIE FILLING)
1-2 tablespoons light brown sugar
½ teaspoon ground or fresh nutmeg
½ teaspoon ground sage
Pinch of cinnamon
1 teaspoon pumpkin pie spice
Salt and Pepper
Grated Parmigiano-Romano cheese

Directions:
Add 1 tbl. olive oil to deep, hot skillet. Add sausage and brown. Drain any fat and set cooked sausage aside
Add remaining tablespoon of olive oil, shallots and garlic to the same pan, saute for 3-5 minutes until soft.
If using white wine, add it now and allow to simmer for 2-3 minutes
Add chicken stock, pumpkin, brown sugar and all spices. Simmer for 5 minutes, stirring occasionally
Return sausage back to pan, add cream and a handful of grated cheese Note: this is when I boil the pasta
Simmer for 10 minutes until sauce has thickened
TASTE- this is when you can add more spice, sugar, cream...
Toss the cooked pasta into sauce, add grated cheese and enjoy.
