As Springtime weather fully sets in here in Denver, we thought it would be appropriate to do a rosé pairing. Normally rosé is enjoyed with light snacks, or just on its own, but we wanted to give you a slightly more substantial dish. This salad is light and fresh and sure to become a Springtime favorite.

In this and future emails, we will match a bottle from our shelves with a tasty recipe, giving you a winning pairing combination for your Sunday supper.
For this first edition, we are pairing a standard from the south of France with a bottle from a forward-thinking Californian producer.

Here’s what we will be pouring for you today:

Casas del Bosque - Rose of Pinot Noir
The Cuneo family, third-generation Italian immigrants, planted their first vineyard in 1993 here in Chile’s Casablanca Valley just as the boom in the region was taking off. This pale pink rose is delicately fruity with hints of strawberries and petrichor. Bone dry, with ample body and refreshing acidity.

Garofoli - Komaros Rosato
The origins of the Garofoli winery date from the end of the 19th century, when in 1871 Antonio Garofoli began the production and sale of local wines. Rosato (pink) wines are an Italian specialty, and Montepulciano is considered one of the best Italian grape varieties for rosato wines. This one has delicate aromas of fresh raspberry and cherry, then slightly savoury notes. The palate is fruity-sweet, fresh and juicy, with a long finish.

Borie Manoux - Beau-Rivage Bordeaux Blanc
Borie-Manoux is a family-owned wine producer and trading house in Bordeaux started in 1870. This blend of Semillon, Muscadelle, and Sauvignon Blanc strikes the nose as fresh and fruity, with bright lemongrass aromas and vibrant notes of citrus. Light-bodied and refreshing on the palate, Beau-Rivage is pleasantly fruity with balanced acidity and good minerality.

Cruse Wine Co. - Monkey Jacket Red Blend
Cruse Wine Co. was an opportunity for Michael Cruse to showcase fruit driven and satisfying wines that are pleasurable, but seriously balanced and unapologetically California. This wine, the flagship of the winery, embodies all the things Cruse Wine Co. is meant to be, as it’s a blend of Valdiguie, Carignan, Tannat, St Laurent and mixed field blend reds and provides incredible drinkability with brightness and ample structure.
