Thai-Inspired Chicken Quinoa Salad in a Jar
Ingredients
2 tablespoons peanut dressing*
¼ cup diced red bell pepper
2 tablespoons sliced green onion
1 large carrot, shredded or cut into matchsticks
½ cup cooked quinoa
2 tablespoons diced cilantro
⅓ cup diced mango
1 cup diced or shredded grilled or baked chicken breast* (see notes for the perfect marinade)
1-2 cups chopped romaine
1/4 cup roasted cashew halves or honey roasted peanuts
Veggies, Italian dressing and mozzarella cheese are combined with pasta in this simple to make pasta salad.
Bowtie pasta
Salami
Green bell pepper
Fresh basil
Kalamata olives
Cherry tomatoes
Mozzarella balls
Radicchio
Arugula
Follow package directions, but we usually cook our pasta 1 minute less than recommended. We love serving al dente pasta (a little undercooked).
Bring 4 – 6 quarts of water to a rolling boil, adding salt to taste.
Add contents of package to boiling water. Stir gently.
Return to a boil. For authentic “al dente” pasta, boil uncovered, stirring occasionally for around 11 minutes.
Remove from heat.
Cool and add salad ingredients!
Pack the jars with about 1/3 cup of arugula and then pasta salad.
Chill and serve!

2 Tbsp chopped avocado
8 grape tomatoes
1 Tbsp red onion, chopped
2 Tbsp chopped cucumber
1 cup of romaine lettuce and baby spinach mix
1-2 Tbsp crumbled feta
6-8 cooked shrimp
1 boiled egg, chopped
Yogurt lime dressing:
2 Tbsp plain Greek yogurt
1 Tbsp lime juice
1/4 tsp fresh squeezed lime zest
sea salt and pepper to your taste
1 Tbsp extra virgin olive or avocado oil
Instructions
In a small glass bowl, whisk all the dressing ingredients.
Layer all items in order starting with the dressing at the bottom - going up, then seal with the lid.
You can store the salad jars in the fridge for up to 3 days.
**tip be sure all of your veggies are completely dry - any moisture will decrease freshness.

INGREDIENTES (para la masa):
1 Taza de Harina de avena.
Ralladura limón.
1 Taza de Harina integral.
1 taza harina de almendras.
3/4 taza agua tibia
INGREDIENTES (para el relleno) MANJAR DE DÁTILES:
1 taza de dátiles o ciruelas pasas sin carozo
1 cucharadita de chocolate amargo en polvo
Coco rallado.
PREPARACIÓN (masa de alfajores):
🍐 Con la ayuda de una batidora mezclar todos los ingredientes hasta formar una masa homogénea.
🍎Luego estirar con un uslero o rodillo la masa de forma uniforme.
🍐Cortar la masa con forma redondas.
🍎 Llevar al horno a 180 grados durante 20 minutos.
PREPARACIÓN (relleno):
🍐Remojar la taza de dátiles o ciruelas pasas en agua tibia por al menos 1 hora.
🍎 Procesar los dátiles o ciruelas pasas junto al chocolate amargo en polvo en una licuadora. Agregar agua hasta obtener una mezcla espesa.
🍐 Una vez listo el manjar de dátiles, rellenar nuestros alfajores.
🍎 Ahora ... agrega coco rallado en los bordes!
