Vegan Sushi 101 Class 🍣 👌🏼we made a lot of yummy rolls and many people tried Inari sushi (rice inside fried tofu wrap) and homemade dorayaki (pancakes filled with sweet red adzuki bean paste) for the first time!! BIG thanks to my father-in-law (a retired sushi chef) who came in to teach us how to make sushi rice and nigiri (hand pressed sushi) 👨🏻🍳🍣 and Segolene for all her help and for capturing everyone in their element!

Trader Joe's Blueberry Muffins, Veganized!
This week on Trader Joe’s instagram they posted the most delicious looking photo of a blueberry muffin with a link to the recipe. I knew I had to make them after seeing the photo…but looking at the recipe which included 3 eggs, 2 sticks of butter, 2 cups of milk I wasn’t quite sure how they would turn out after I attempted to veganize them. But I went ahead and they turned out amazing: super moist, perfect sweetness to tart level, and juicy blueberries in every bite ☺ I even added vegan chocolate chips to a few, which were my favorite (you can never go wrong with chocolate in my opinion). Not to mention they are super easy to make!
My Secrets to Veganizing Recipes:
I always sub coconut oil for butter, use almond milk instead of cow’s milk, and to replace the 3 eggs I made 3 flax eggs (1 egg= 1 TBSP flaxseed meal + 3 TBSP water mixed together then put in fridge to thicken for at least 15 min.)
So here’s the recipe ☺ Hope you enjoy them as much as my family and I do!
Trader Joe’s Vegan Blueberry Muffins
INGREDIENTS
Makes 12-15
• 4 cups All-Purpose Flour
• 6 teaspoons Baking Powder
• 1 teaspoon Sea Salt
• 1 cup brown sugar, plus more for sprinkling (optional)
• 3 flax eggs, beaten
• 2 cups almond milk
• 1 cup coconut oil, melted
• 1 teaspoon Vanilla Extract
• 2 cups Frozen Blueberries (do not thaw)
Optional: vegan chocolate chips
DIRECTIONS
Preheat oven to 425°F. Grease muffin tin with cooking spray or melted coconut oil; set aside. Prepare flax eggs. In a large bowl, mix flour, baking powder, salt and sugar; set aside.
In a large bowl, combine flax eggs, almond milk, coconut oil and vanilla. Add one-third of dry mixture to wet ingredients and stir to combine. Repeat addition of dry ingredients until fully incorporated. Gently fold in blueberries and chocolate chips if adding.
Scoop muffin batter into greased muffin pan (cups will be very full—almost overflowing—this is ok!). Lightly sprinkle muffin batter with sugar (optional). Place pan on center rack of oven and bake 22-25 minutes, until muffins are golden. Let cool 10 minutes, then gently remove muffins from tin. Enjoy warm!

Super excited to share this Easy Vegan Scone Recipe with you!! I discovered the recipe in Vegan with a Vengeance Cookbook, and made a few slight changes to make it even easier :) these are by far the easiest and best scones I've had. Nothing fancy, but goes perfect with your favorite spreads or hot out of the oven :)
Best Vegan Scones
Makes 12-16 scones
3 cups all-purpose flour
2 tablespoons baking powder
¼ c brown sugar, plus extra for sprinkling on top
Dash of salt
1/3 c coconut oil (refined)
1 ¼ c almond milk or non-dairy milk of choice
Optional add-ins: 1 c chocolate chips, 1 c raisins, 1-1/2 c fresh/frozen berries, 1 c vegan shredded cheese to make savory scones :)
Instructions
1. Preheat oven to 400, lightly grease a cookie sheet or cover with parchment paper.
2. In a large mixing bowl, combine dry ingredients. Add wet ingredients to dry, mix until just combined. Stir in optional add-ins if desired. Dough should be clumpy and not too sticky.
3. Drop by ¼ cupfuls onto cookie sheet and pat the tops just a bit to round them out; sprinkle with a bit of brown sugar if not adding anything.
4. Bake 12-15 minutes, until slightly browned on the bottom and firm on top

Just tested out mashed banana on top of my chocolate oatmeal muffins, so good!! Also added in raisins and pecans in half of the batter and chocolate chips and marshmallows topped with peanut butter in the other half 👌🏼

Started 2018 baking of course! Baked my 1st brownie bottom peanut butter cheesecake 🍫🥜🍰👌🏼 it’s now chilling in the fridge waiting to be eaten this evening 😋 Got this recipe from Vegan Pie 🥧 in the sky cookbook!! I’m loving all her recipes, so easy and delicious! 🎊🎉
Vegan Pancakes, so easy and delicious! Added blueberries, banana, and chocolate chips :D didn't even need to add syrup they were so good!
Ingredients
11/4 c all-purpose flour
2 TBSP brown sugar
2 tsp Baking powder
1/2 tsp salt
11/4 c almond milk
1 TBSP Olive/coconut oil, melted
Optional add-ins: blueberries, chocolate chips, sliced banana 🍌, anything you want!
Instructions
1. Mix all ingredients in bowl.
2. Heat a lightly oiled griddle over medium high heat.
3. Scoop batter with 1/4 c or large spoon onto griddle and cook until bubbles form and edges are dry. Flip and cook until browned on the other side.

My Easy Vegan Chocolate Chip Marshmallow Cookie Recipe :D
Makes 25-30 cookies
1 c melted coconut oil (refined)
1 c brown sugar
½ c almond milk
2 teaspoons vanilla extract
3.5 c all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 ½ c vegan mini marshmallows (Trader Joes are vegan ☺)
½ heaping c vegan chocolate chips
Instructions
1. Preheat oven to 350 degrees
2. In a large bowl cream together coconut oil & brown sugar, then add the almond milk & vanilla.
3. Add flour, baking soda, & baking powder in slowly and mix well to combine with wet ingredients.
4. Fold in marshmallows ½ c at a time then add chocolate chips.
5. Using your hands roll the dough into TBSP sized balls & place them on an ungreased cookie sheet (or a sheet of parchment paper on cookie sheet), then flatten them out a bit with your palm.
6. Bake for 10 minutes. Tops may seem a bit soft but if the bottoms are browned they are ready, they will continue to cook on the cookie sheet after you take them out of the oven. Let them cool for a few minutes on the cookie sheet.
Cookie Recipe Testing! Baked Vegan Chocolate Chip Marshmallow Cookies for the 1st time- my new favorite cookies! They were so good, I decided to send them to family in California and Texas as gifts :) I'll post the recipe soon! these are too good and easy not to share :D
We baked over 💯 vegan sugar cookies yesterday at my Christmas 🎄 cookie 🍪 class!! topped them off with vegan homemade frosting naturally dyed with matcha 🍵 powder, activated charcoal, beet powder, grated beets, and cocoa powder 🍫😋

Testing out a new scone 😋added one diced Fuji apple 🍎, vegan cheddar cheese 🧀 and diced sun-dried tomatoes 🍅 and I just took my first bite...the apple adds a nice sweet crunch to this savory scone 👍🏼 I love baking because you can really get creative with your ingredients!
For those who couldn't make it to my 1st class, here is my go to Easy Vegan Chocolate Chip Cookie Recipe!
Makes 15-20 cookies
½ c melted coconut oil
1 c brown sugar (feel free to cut in half and/or use maple syrup)
¼ c almond milk
1 teaspoon vanilla extract
2 c all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 c vegan chocolate chips (I prefer Trader Joes which are vegan)
Instructions
1. Preheat oven to 350 degrees
2. Cream together coconut oil & brown sugar, then add the almond milk & vanilla.
3. In a separate bowl mix the flour, baking soda, & baking powder.
4. Combine the wet & dry ingredients (it will be crumbly, this is OK), then use your hands to combine wet & dry ingredients together, then fold in the chocolate chips.
5. Roll into TBSP sized balls & place them on an ungreased cookie sheet (or a sheet of parchment paper on cookie sheet), then flatten them out a bit with your palm.

dorayaki (Japanese red bean pancakes), sooo much yum! I use my easy pancake 🥞 recipe and then fill them with sweet red Azuki beans 😋
Made dorayaki today, a Japanese treat consisting of pancakes filled with sweet Azuki red bean paste! Sooo good :) I’ll definitely be making these at a future class, super easy and done in less than 30 min ✅

Baked matcha 🍵 cupcakes for the 1st time ! Experimented with the recipe a bit but they turned out 👌🏼 not too sweet so my homemade vegan matcha frosting goes great with it! 😋

What is this? Anpan! Japanese sweet roll filled with sweet red bean paste 🍞😋 I can never get enough of these in Japan, but almost always they are made with cows milk and butter which my tummy cannot tolerate 😕 so I made an easy 30 min. Anpan! Recipe coming soon :)
Baked funfetti cupcakes for the first time yesterday, the highlight was making homemade vegan frosting naturally dyed with turmeric and cocoa powder!
Made homemade mozzeralla for the first time! Perfect on a pizza and anything else! Definitely will be using this for my future pizza class :)
