Woe is me! Having to test different plant-based cheeses for our class in a couple weeks! Truffle and black garlic is an umami bomb! Aged Cheddar is a classic but the charred jalapeño powder cheddar is over the top!

Oh my! Is there anything better than the smell of freshly baked cinnamon rolls on Christmas Day?

If I hurry, I think I can eat them all before Julie and Sora wake up!!! I’ll open the windows and back door…They’ll never know!!!

Hey folks!

Next week is going to be really cold here in the valley! If you can right now, give to your charities and shelters as they will need those resources! Blankets, socks, clothing, pet food, gloves, bennie hats, coats… anything you can. Look in your closets and see if you can give anything you are not needing. I know we are all busy with Christmas just a couple days away but anything helps! A small donation can mean the world to those who don’t have much!

Be sure to check in with elders and those who may have hard time getting around in those cold temperatures… a call and a smile can do wonders to lift spirits when stuck inside 🙂

And don’t forget about your pets.. if you can’t bring them inside, make some shelters out of boxes with plenty of blankets or old clothing and make it a place to stay warm!

Told you I have some tricks up my sleeves!

Cashew Based Cheeses! Starting on the upper left is a Black Olive Chèvre style, below that is a Mushroom and Black Garlic with Parsley Powder, at the bottom is Balsamic and Fennel Seed, moving up to the right is a Cheddar with Chive Powder, and top right is a Black Truffle… center is the Mozzarella and we have a Peach Mostarda at the top, Peach and Habanero Jam, and Pepper Jam to the right with Homemade Sesame Grissini breadsticks…

This is a bit advanced for sure, but as I tell everyone… if I can do it you can too!!!

I’m going to play with more flavors and possibly different bases for those who can’t have nuts… we’ll see how it works but… and I’m asking here… what flavor(s), styles would you like to see?

Share your ideas, and who knows… I can use you as a taste tester?!?

Caprese Salad…

When life (or one of your favorite produce delivery companies) gives you beautifully ripe cherry tomatoes, what do you do?

Well, let me tell you! You pull up your big boy pants and learn how to make cashew mozzarella and then make a Caprese Salad with fresh Basil and balsamic reduction…

Oh yes… that’s homemade cashew mozzarella! I know… how can you call it cheese without real milk blah blah blah… I don’t judge and neither should you! If you have fresh mozzarella use it :-)

Oh yeah! Homemade corn tortillas with black beans, chipotle and maple spiced sweet potatoes, radish slaw, and salsa verde…

I was up and thought to myself… self you haven’t made homemade corn tortillas in a long time. So I dug out my dried corn and cal… boiled it and then let it sit overnight.. rinsed it and put it through food processor to make the masa… made the tortillas and boom! Is there anything better than fresh homemade corn tortillas? I made extra to dry out and fry later for some nachos for sure!

The rest is the usual fair… seasoned smashed black beans, chipotle and maple syrup roasted sweet potatoes… slaw made with cabbage, radish, carrots, jalapeño, cilantro, red onion and salt… and salsa verde with tomatillos, onions, jalapeños, cilantro, lime, garlic…

I found a place that has red and purple dried corn that I may try to make tortillas out of later… will think of something fun to go along with!

Peach and Candied Ginger Galette with a Cornmeal Crust

I wanted something summery to make with the produce we get here in Yakima! I do love pies but I really favor the crust! So a galette it is! Cornmeal with some flour, water, salt, and coconut oil instead of butter. The filing is peaches, candied ginger, a little lime juice, vanilla, sugar, and cornstarch… baked it on a sheet pan and boom, 40 min later you get this beautiful thing!
