Jerusalem Artichokes (often called Sunchokes or Earth Apple) are high in resistant starch and store well in the cold room in buckets with plastic over top (they can dry out quickly in storage). I harvested an abundance of these thanks to my back lane garden (which I lease a portion of from the City), but had to water extensively in the summer through fall to help them swell to this large size.

Beautiful weather here through fall has given an extended bounty of produce. Vegetables this fresh and picked fully ripe have higher amounts of nutrients including polyphenols (good for gut health), vitamins and minerals.

Just managed to get these Jerusalem Artichokes (Sunchokes) out of the ground despite winter arriving early. These knobby tubers grow underground beneath tall sunflower like stalks on a piece of land I pirate in the back-lane. They are high in resistant starch which feeds healthy bacteria in the large intestine. I slice them lengthwise and fry with onion, add a little water and cover until soft. Mash with grass fed butter and salt.

It's harvest time for roots! These beauties are black radish, similar to turnip but with the spiciness of radish. Peel and cook like turnip. Great for gut health, stimulating digestion, and detoxing the liver and stomach.

Difficult to find in grocers, I grow them from seed - just look for them in seed catalogues, planting in warm soil well into June, harvesting in late September.
