Banana / PB / blueberry muffins with flax and Greek yoghurt for a great freezer snack. Perfect for the whole family (especially blueberry-obsessed toddlers!) 💗💗
I know I know this isn’t cake! But such an exciting collection of leaves and herbs from our garden. We have been so excited about this, planting lots of leaves, basil, parsley, thyme, coriander, chillies, spring onions, garlic chives, and Beaudesert Blue pumpkins, which are native to Queensland and now a rare heirloom variety (so it’s good to plant them if you live in Queensland!).
We have also been so lucky to have some of our lovely neighbours gift us two capsicum plants which they grew from seeds (!!) and which are now thriving! And most exciting, we have mulberry, lemon, and Australian native Atherton raspberry trees - which I am very hopeful can be used in sweet treats when they produce fruit in the years to come!

Now if anyone has an idea about preserving basil in order to gift it (not freezing or in pesto) I am all ears! We have an abundance!

After a little hiatus from posting (and sadly from baking as well), I’m getting into the festive spirit and hoping to make many treats in the coming weeks!
Reminiscing on this BEAUTY which formed part of the gorgeous celebration of marriage for angel .
I am obsessed and it was such a joy to make this cake! It is ALWAYS and will forever be a privilege to contribute to special celebrations, for friends and family near and far. Thank you so much Dea and Will 💗
Lactation cookies. Fool of good fats, oats, flax, brewers yeast, and of course lots of chocolate because that’s what Mum’s deserve. These were two flavours: coconut and walnut (both with maximum chocolate) for the lovely
Wedding cake 🥰 My very own ✨
This was a completely plant-based beauty which I stacked the morning of my wedding, comprised of the following flavours:
🍏 APPLE CRUMBLE - Apple cinnamon sponge / cinnamon buttercream / apple crumble pieces
☕️🍸 ESPRESSO MARTINI - Chocolate sponge / dark chocolate ganache / kahlua coffee SMB
🍬🍓 STRAWBERRY FUNFETTI - Vanilla funfetti sponge / strawberry SMB (inspired by the bakery classic in Australia, a finger bun)
🥥 COCONUT CUSTARD - Coconut sponge / coconut cream custard filling / vanilla buttercream
All coated in a classic vanilla buttercream with an understated detail finish.
This was truly a labour of love (as you would hope!) - my (now) husband and loved ones were forced to trial different flavours over the months prior (rejected flavours included choc orange and Oreo). My only regret is that all of the cake didn’t get cut up and then we lost it when everyone went back for more! (Our lovely caterers had put it in a second fridge I forgot about!). I would never have fully explored the potential of vegan and plant based baking had I not met my gorgeous, kind husband, and I am so glad I’ve been able to develop these skills in order to make sure he always has three dessert treats available in the house.
Plant based treats are a regular fixture for me now and I’m looking forward to being able to share them more widely with ALL great loves in future. I love being able to make baked goods that are just well, bloody good 💗
