Great cook on the Weber today. Nothing says Christmas like a standing rib roast. Cook to 125 Internal. Then get the sear on the outside.

New way to cook a Christmas spiral ham. Used mustard as a binder and seasoned with bbq seasoning like a Boston butt. Put on the pit boss at 225 for an hour to let the rub set. Then transfer to pan, add chicken stock, butter, pineapple and juice. Cover with foil and steam for an hour and a half. Remove foil and baste with glaze and leave uncovered for 25 minutes to set glaze. Rest and enjoy.

Cooked a standing rib roast last night on the pit boss. Marbling was average so I wasn't expecting greatness. I've cooked them on charcoal for years. This is the first cook I believe the Webber kettle beats the pit boss. The one for Christmas will be on the kettle. It was pretty good but not my best work.

24 hour marinade London broil. Cooked on 450 for 25 minutes. With potato cakes on the black stone. And oysters too.

12 hr pulled pork on the pit boss at 250. Tried the Texas crunch. Wrapped in foil for the last 2 hours. Will be doing it that way again.

Finished product. Got a nice smoke ring. Flat was a tad dry. Point was great. Went 16 hrs on 200. Going to shoot for 12 hrs at 250 next time to see if that will keep the flat part more moist. I'd give it a 7 out of 10

Dinner at the house of meat.
Chicken wings. Half dry buffalo and half ranch powder. Covered 2 hrs before cook. Wet sauce is franks buffalo with half stick butter and honey at the end. Smoked brussel sprouts. Cook for and hour on 350 then 15 minutes on 400.

Today's experiment. Pork Belly. Simple season on salt, pepper, garlic and onion powder, chili powder and smoked paprika. Smoked 200 for 5 hrs, 250 for 2 hrs. Cubed then panned with a half of beer and sauce. Reduce at 300 for 1.5 hrs and done. Moist pork bites.

Dinner tonight was on point. Turned tough london broil into tender meat. Marinade with olive oil, worcestershire sauce, salt, pepper, and garlic and honey for 4 hours. Then grill hot 450 for 20 min after a sear on the blackstone. With grilled shrooms and brussel sprouts. .
