1 pkg rotini pasta
1 jar pizza sauce
1 pkg mini pepperoni
1/2 onion, chopped
1 can sliced black olives
1 pkg cream cheese
Chopped pepper (left out because my co-worker doesn’t like them)
1 pkg cherry tomatoes
Crumbled bacon
Cooked pasta according to package. Then I cut up the cream cheese and dumped everything in the crock pot. I dumped the pasta in hot so just had the crock pot on low/warm all morning to heat the remaining ingredients through and we had it for lunch.
We had to try the taco pizza at Taco John’s - I recommend it!!!!

Chilli Garlic Prawn Pasta
So this was my inspiration recipe :

▢ 300 g (⅔ lb) raw prawns (shrimp) thawed, peeled, deveined (note 1)
▢ 300 g (⅔ lb) linguine or spaghetti
▢ 500 g (1 lb) fresh tomatoes ~4 large, ripe, diced (note 2 for substitutes)
▢ 1 cup fresh parsley finely chopped, about a handful
▢ 1 tablespoon tomato paste
▢ 2 cloves garlic minced
▢ ½ tablespoon dried chilli flakes or adjust to taste
▢ 1 teaspoon brown sugar or white sugar
▢ salt and pepper to taste
▢ 2 tablespoon olive oil optional: extra to serve
Prawn (shrimp) seasoning
▢ 1 glove garlic minced
▢ ¼ teaspoon salt
▢ ¼ teaspoon black pepper
▢ 1 teaspoon paprika sweet or smokey
▢ 1 tablespoon olive oil
To serve (optional)
▢ fresh parsley finely chopped
▢ chilli flakes
▢ extra virgin olive oil
▢ parmesan cheese
Instructions
Combine prawns with prawn seasoning ingredients. Mix well and set aside.
Cook linguine according to packet instructions (remember to generously season the cooking water with salt). Cook to al dente.
Whilst the pasta is cooking, pan sear the seasoned prawns on a large frying pan without any oil. Sear for 1 minute per side on high heat. Remove and set aside.
In the same pan (no need to wash), add olive oil, garlic and tomato paste. Stir through on medium heat until aromatic and garlic lightly golden. Add tomatoes, chilli flakes and sugar. Season with salt and pepper to taste. Turn the heat down to low and simmer with the lid on, for about 10 minutes or until the pasta is done.
Once the pasta is ready, return the prawns back into the pan with parsley. Mix through over low heat then immediately add drained pasta and ½ cup of pasta cooking water.
Toss pasta through the sauce and serve with a drizzle of olive oil, fresh parsley, parmesan cheese and extra chilli flakes if desired.
****so… I had bought a bag of prawns from Off the Hook… I had some cherry tomatoes, homemade jar of roasted tomatoes, then the chili flakes, tomato paste, sugar, garlic, parsley - put all that in a baking dish and baked it for about 35-40 minutes at 400* and the prawns were cooked through. In the meantime boiled some water and cooked pasta, then mixed everything together. I’ll put my plated bowl picture in the comments but this one looked better.

Creamy Potato and Bacon Soup
It was cold and dreary outside so was ready for some comfort food (and it was easy)
1 can cream of potato
1 can cream of bacon
1 can of sliced potatoes, drained
1 soup can full of milk
A little heavy cream (1/3 C)
2-3 oz velveeta
Extra bacon crumbles
Heat over med-low heat until heated through and cheese is melted. Season with salt and pepper.

Well… since absolutely NOTHING went as planned all weekend 😒 my idea of Easter supper with my guys didn’t work out as planned… so instead made shrimp Alfredo with some garlic bread made from dads homemade Anaheim pepper cheddar bread
Breakfast Pizza
Made breakfast pizza for brunch today. Kind of a garbage pizza. I had a refrigerated pizza crust in the fridge. Then I had some nacho cheese and salsa I used for sauce. Scrambled some eggs. Used some crumbled bacon I had in the freezer. Then had a partial bag of shredded cheese and threw a few jalapeños on top.
It was nice out yesterday so I grilled burgers and did a little fridge clean out, we had a few mashed potatoes and gravy and some Alfredo noodles
