Sweet Mashed Potato Salad
Dressing:
1 C sugar
2 T flour
3 eggs
1 t dry mustard
Salt
1/2 C vinegar
1/2 C water
Boil until thick. Cool. Mix with 15 oz Miracle Whip. Place in fridge.
Boil 4 lbs potato until tender. Place in mixer and mix. Add dressing and continue mixing. Hand mix in green onions, 3 boiled eggs and celery seed. Place in fridge and enjoy!
Tried a new dip yesterday at school for Administrative Professionals Day! Cheesy Caprese Dip. I doubled the recipe for this rectangle crockpot. I heated it on low for about an hour and the pan was empty at the end of the day!
Cheesy Caprese Dip
8 oz cream cheese
1 C. shredded mozzarella
1 jar pesto
1/2 C mayo
1/2 C parmesan cheese, shredded
1 tomato, chopped
Fresh basil, chopped
Combine cream cheese, mozzarella, pesto, mayo, parmesan cheese. Place in oven safe pan. Bake at 400 degrees for 20 min. Top with tomatoes and basil before serving. Serve with crackers or chips!
I have included the link for the crockpot too! Makes a great Mother’s Day gift. I got mom one last year…and asked her to make a breakfast casserole for Abbie’s wedding shower! Haha
Who loves tomato, basil and mozzarella? Quick snack or low carb supper! I like to mix my own sauce so I don’t open a whole jar of marinara. Just mix 8 oz tomato sauce with pesto. I added about 3T. to the sauce. Mix and put on a 8” low carb tortilla. Top with sliced grape tomatoes, fresh mozzarella balls and a handful of parmesan cheese. Bake at 375 for 7-9 min then top with a few pieces of fresh basil. This makes me ready for summer!!
Bing Bang Low Carb Shrimp! I’ve been wanting to try this recipe for weeks. The shrimp batter is egg wash then a combination of almond flour, parmesan, garlic powder and pepper. The sauce is super easy or you can use a premade sauce like the Yum Yum sauce! Full recipe on Dunham Dash & Dine FB!
Keto Bing Bang Shrimp
1 lb Raw Shrimp peeled and deveined
⅓ cup Almond Flour
⅓ cup Grated Parmesan Cheese
1 tsp Garlic Powder
¼ tsp Ground Black Pepper
1 Egg beaten
Bang Bang Sauce:
⅓ cup Mayonnaise
2 tbsp Sriracha (I used sweet chili sauce because that’s what was open)
1 tbsp Coconut Aminos or Soy Sauce
1 tsp Garlic Powder
¼ tsp Black Pepper
In advance, make Bing Bang sauce and keep in fridge.
Thaw and dry shrimp. Combine flour, parmesan, garlic powder and pepper in one bowl. Whisk eggs in another bowl.
Heat oil at 350-375 degrees. Dredge shrimp in eggs then dry batter. Lay on baking sheet well coated. Fry for 2-3 min. Sprinkle a little Old Bay Seasoning on when done! Enjoy!!

Macaroni Slaw
1 pkg (7 oz) ditalini pasta
1 pkg (14 oz) coleslaw mix
1 medium onion, chopped
1 medium green pepper, chopped
1 medium cucumber, chopped
3 celery ribs, finely chopped
Dressing:
1 1/2 C mayonnaise
1/3 C sugar
1/4 C apple cider vinegar
1/2 t salt
1/4 t pepper
Prepare ditalini according to instructions. Drain, rinse and cool. Chop veggies. Mix slaw, pasta and veggies in large bowl.
Mix dressing ingredients. Pour over slaw mixture and refrigerate at least an hour. Will keep for several days!
Need to cook for a crowd or do a little freezer prep? This pulled pork recipe is simple and cooks overnight! My favorite is the brown sugar rub that creates a sweet bark. Add your favorite barbecue sauce and you’re ready to go! The large pork butt I cooked yielded 3 half gallon freezer bags of meat! This would be a great add to your graduation party or family reunion! 1 pork butt (8-10 lbs)
1 1/2 C beer
1/2 C water
Rub:
6 tbsp brown sugar
2 tbsp paprika powder
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp mustard powder
2 tsp cumin powder
2 tsp dried oregano
1 tsp cayenne pepper
2 tbsp cooking/kosher salt
2 tsp black pepper
Marinade pork in beer/water for 12-24 hours. Preheat oven to 230 degrees. Place pork butt and liquid in baking pan. Cover with pork rub. Cook uncovered for 12 hours in oven. Let rest and then shred! Add your favorite barbecue sauce.
Who’s ready for summer and pasta salad? Girard’s Champagne dressing from Hy-Vee is a great alternative to a standard Italian dressing! I added a little “Everything Bagel” seasoning on top. One box of veggie spiral pasta with carrot slices, cucumber, red pepper, salami, black olives, green olives and red onion. So easy and delicious!
Crappie bites with a side of Duke’s tartar sauce and Famous Dave’s cornbread!! John had a knee scope Thursday so he’s been catching all the Masters action. I love the Red Lobster Fish Fry batter!! I added a little onion powder, garlic powder, pepper and seasoned salt. I let the crappie soak in buttermilk for 20-30 minutes and then tossed in the dry batter. Fried at 365 degrees for 4-5 minutes depending on fish size. We like to cut the filets into strips and cook! He’s not a tartar sauce fan but I love these little 8 oz jars of Duke’s!
Smoked pork belly! Delicious!! I purchased a large pork belly from Sam’s a few weeks ago that was about 6.5 #. I did not trim any fat. Just pat dry, apply the rub and smoke at 225-245 degrees for 3 hours with a water pan and another 30-40 min on direct heat. Cut into chunks and made a pork belly sandwich with cheddar cheese and barbecue sauce on Texas toast. I’m anxious to try this on a BLT!
Ingredients:
6 pounds pork belly (cut into 1-inch strips).
1 C brown sugar
3 Tablespoon smoked paprika
3 teaspoons chili powder
3 teaspoons garlic powder
3 teaspoons onion powder
3 teaspoons kosher salt
3 teaspoons black pepper
Black Eyes of Texas Low Carb Edition! You can definitely replace the riced cauliflower with corn tortillas. I thought this was a good low carb switch…right as my husband suggested crunched up Fritos on top?! Oh my.
Black Eyes of Texas (low carb)
Ingredients:
1 lb hamburger
1 onion, chopped
1 bell pepper, chopped
1 can black eyed peas, drained
1 can enchilada sauce
1 can cream of mushroom soup
1 can cream of celery soup
1 can Rotel tomatoes
2 pkgs riced cauliflower, steamed
(OR 10-12 6” corn tortillas)
Shredded cheese
Brown meat, onions and pepper. Add peas, soups, tomatoes, enchilada sauce. Grease 9x12 baking dish. If using cauliflower place on bottom of pan. Top with meat mixture and top with cheese. Bake at 350 degrees for 30 min or until bubbly.
If using corn tortillas, place half tortillas on bottom of pan, half meat, half cheese. Repeat layers and bake.
I would also add sliced olives if you like them!

Ingredients:
2 T cornstarch
4 T soy sauce
1 lb beef (I marinated two thin ribeyes)
5 T. Heavenly Koroneiki Oil
1/4 C chopped onion
2 T minced garlic
1/4 t red pepper flakes
1 C mushrooms, thick sliced
1 C carrots, cut in strips (I used carrot slices)
2 C broccoli florets
1 can beef broth
Combine soy sauce and corn starch. Mix well and add marinated steak. Set aside. Put 1 T oil and 1/2 C beef broth in large skillet. Warm to medium heat. Add onion and garlic. Bring just to sizzle and add broccoli. Cover and cook for 3-5 min to steam broccoli. Remove from heat and set aside in bowl.
Add 4 T oil to large skillet. Heat and add beef. Sprinkle with red pepper flakes. Cook approximately 3-4 min. Add carrots and cook another 2-3 min. Continue to stir. Add more beef broth as needed. Add mushrooms and broccoli mixture. Continue to cover and stir u til mixture reaches desired tenderness. Serve with fried rice.
Steak marinade (from Jauna Hicks):
1/4 C olive oil
1/4 C soy sauce
1/4 C cooking Sherry (dry)
1 t gibger
Garlic salt
2 T molasses
Mix well and marinade overnight.
Loving this new pitcher from Amazon! So far I've just made my Crystal Light but it's going to be perfect for sun tea. It's a narrow base and doesn't take up much room in the fridge. The flip top lid is leak proof. Enjoy!!

Smoked chicken wraps! AKA leftover beer can chicken. If you haven’t tried the 1820 sauce get you a bottle!! It’s delicious! I used it in the place of mayo on the wraps. Wraps included warm smoked chicken, hot bacon, lettuce, tomato, Swiss cheese, dill pickles, red onion and olives!
Beer can chicken! Delicious. Smoked at 300 degrees for about 3 1/2 hours. Got internal temp to 185. (Higher than normal but I wanted it falling off the bone.) Pat chicken dry. Rub chicken with oil. Mix dry ingredients and pat all over chicken. Use it all! Make sure chicken is room temp when placing on smoker. I also used a water pan while smoking it.
Chicken rub:
INGREDIENTS:
1 opened, half-full can of beer at room temperature (I like to use the tall, skinny cans)
1 5-pound whole chicken, neck and giblets removed
2 T. canola oil (I used Heavenly Oil Chipotle)
1 T. cumin
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. kosher salt, plus a bit more sprinkling over entire chicken
1 tsp. sweet paprika
1 tsp. chili powder
1 tsp. dried oregano
1/2 tsp. ground black pepper
freshly cracked, coursely-ground black pepper
Happy Friday! Yesterday was truly a recovery day. No workout so back at it this morning with a 45 minute low impact ride. I love low impact for a sweaty and consistent workout.
My Aunt Norma is an amazing cook! I remember Christmas dinners at her house. Uncle Van always had prime rib or something special. One of the family favorites was this Clam Chowder recipe. We’ve been eating it all week. For a little lighter version substitute half milk and the other half and half. I might add an extra can of minced clams. You can’t mess it up!! I will continue on a soup streak until this weather warms up!! Enjoy!
Anyone else have trouble with birds?! We have a little spot above our outdoor speakers where they like to rest...or build a nasty nest. I didn't want to post a review until I had them up for a month and they are WORKING wonders! I added them to my basement porch this weekend. They come with a little hanger but I also bought some little clear adhesive hooks I could put on the porch ceiling that wouldn't show and also wouldn't leave any residue. So far so good if you're fighting a bird battle like me. I'm wishing them luck in the trees to the east! HAHA
My favorite sides! This couscous blend pairs so good with any steak, chicken or fish. I am thinking C. All of the above. The roasted veggies are delicious and you steam it in the microwave in a few minutes!
Low Carb Reuben Skillet Meal! Very easy for all you corned beef lovers!! Recipe on Dunham Dash and Dine!
Low Carb Reuben Skillet
1 bag coleslaw
1/2 red onion, chopped
3 T. butter
3 C. shredded corned beef
1 C. sugar free Thousand Island dressing
2 C. shredded Swiss cheese
Sauté coleslaw and onion in butter. When tender add corned beef and dressing. Top with cheese. Serve hot!
Best salmon marinade! Lone Star Sweet Bourbon marinade with garlic. I like to marinade for at least 24 hours. Plated with grilled veggies marinated in Garlic Herb marinade mix and Schwan’s Five-Grain Rice Pilaf. Be sure not to overcook the salmon. It doesn’t take long on the grill. Marinade:
1 small can pineapple juice
2 T. minced garlic
3 T. soy sauce
2 T. brown sugar
1 T. bourbon
1/2 C. oil
Salt & pepper
Spinach and Artichoke Dip Anyone? I will serve this with chips and an assortment of veggies today for my low carb lovers. It’s an easy recipe with a hint of garlic and fresh salsa!
Spinach and Artichoke Dip with a Kick
Ingredients:
8 oz cream cheese, softened
1 C light sour cream
1 pkg frozen chopped spinach, rinsed and drained
1 can chopped artichokes
1/2 C fresh pico or salsa
1 C shredded parmesan
2 T minced garlic
1 T red pepper flakes
1/2 C half and half
Mix well and heat in crock pot on low. You can add more half and half to reach desired consistency. Dip will thicken when cooking. Enjoy!!
Who’s ready for the Super Bowl? I smoked some ribs this morning while I made a quick trip to the Chocolate Walk in Brunswick, MO. What a fun little town! Homemade rub recipe on top of my favorite Sticky Pig Mustard which is available at our local Prengers.
Awesome Rib Rub:
3/4 C brown sugar
3/4 C white sugar
1/2 C paprika
1/4 C kosher salt
1/4 C garlic powder
2 T. ground ginger
2 T. onion powder
2 t. rosemary
You can double this recipe. It keeps in an airtight container for several months.
Cooking Specifics:
Remove membrane from back of ribs. Slather with Sticky Pig Mustard (or regular mustard). Top generously with rib rub. I heat my ceramic smoker to 250 degrees, place ribs on a rib rack with a water pan underneath then close dampers to get smoker temp to 225 and let them go. I put them on at 9 am, left for Brunswick and came back at 1:30 and they were ready to go. You can mist with apple juice during the smoke. My right hand man, Johnny, took care of that for me! Remove and let rest. I don’t like to wrap in foil because I don’t want to lose the rub on the outside. I place in aluminum foil containers and will reheat at a low temp tomorrow with a tad bit of water in each pan.
Celebrating 50th birthdays seems to be a trend in my world my world right now! Cooked up a big chocolate chip cookie last night with a Copy Cat recipe for Great American Cookie icing! The cookie recipe is a Copy Cat recipe from Bennigan’s. The perfect amount of cookie dough for a pizza size cookie! Don’t mind my rookie decorating. I wanted to make sure it looked “homemade.” Haha
Chocolate Chip Cookie
Ingredients:
1/2 C softened butter
3/4 C brown sugar
1/4 C white sugar
1 egg
1 t vanilla
1 1/4 C flour
1/2 t salt
1/2 t baking powder
1/2 t baking soda
1 C semisweet chocolate chips
Preheat oven to 350. Mix butter, sugars and egg. Add vanilla. Next add flour, baking powder, baking soda and salt. Mix well. Stir in chocolate chips. I used my round pizza stone and covered with parchment paper. Place cookie dough in the center and pat down. Be sure to leave a little space on the edge for it to expand in the oven. Bake 12-15 minutes until brown. Cool.
Icing:
1/2 C butter, softened
1/2 C shortening
4 C powdered sugar
1/3 C milk
Mix butter and shortening. Gradually add milk and powdered sugar and continue mixing. I added one cup of powdered sugar at a time with a dash of milk. Can place in the fridge until you’re ready to decorate!

Blackened Orange Roughy
Ingredients:
4 orange roughy filets (I used
frozen from Schwans)
Traeger Garlic/Chili Powder Rub
Zatarain’s Blackened Seasoning
1/2 C. butter
1 lemon, quartered
Dry fish and season each side with Traeger and Zatarain’s seasoning. Melt butter on medium to medium high. Cook each side 2-3 min. Be gentle and only turn once. Remove from heat and squeeze fresh lemon juice on top. Served with Duke’s tartar sauce.
Fried Cabbage with Bacon
1 small head green cabbage, thinly sliced
1/2 head red cabbage, shredded
2 C. cooked bacon, chopped
1/2 large red onion, chopped
3 T. minced garlic
2 T. chipotle Heavenly Oil
1/4 C. butter
Melt butter with oil in skillet. Add garlic and onions. Cook 2-3 min. Add cabbage and cooked bacon. Being heat to skillet them turn down to simmer until all ingredients are tender.
So easy to use and cleans up in a minute! I use this to make salad dressing, chicken salad, crab salad, etc. Simple and easy!

Old Fashioned Cheeseball
Ingredients:
8 oz cream cheese, softened
8 oz garlic herb cream cheese, softened
1/4 C finely minced onion
1/3 C finely minced green pepper
1 C. crushed pineapple drained
1 T. Worcestershire sauce
Dash soy sauce
2 t. garlic powder
Salt
1 C. finely chopped pecans
Mince onion place in bowl. Mince green pepper and place in bowl. Mix cream cheese in food processor. Add onions, green pepper, soy sauce, pineapple, Worcestershire, garlic powder and salt. Place on refrigerator for 30 min. Remove. Place chopped pecans on parchment paper, place cheese ball on top, cover with pecans. Could make two small cheese balls or one large. Serve with wheat thins or triscuit crackers! Will post link for Ninja food processor. I use it all the time and just keep the base plugged in behind my kitchen tv!
Rice paper for FRESH SPRING ROLLS! I will be making more of these soon! I love their light flavor and they were so easy to fill. I've tried to make sushi before and this was a fun twist on a new appetizer.

Fresh Spring Rolls
Ingredients:
Rice paper
Butter lettuce
Grated carrots
Imitation crab meat, finely chopped
English cucumber, julienned
Red cabbage, shredded in food processor
Avocado, thinly sliced
Ginger flakes
Sesame sauce for dipping
Prepare all meat and veggies. Put hot water in a large pan that rice paper can lay flat in. Make sure hot water is warm but not too hot to touch. When all ingredients are prepared, place rice paper in hot water for 10-15 seconds. I held it and flipped it over. It will stick easily so be gentle and place on a wet cutting board laying flat. Fill with ingredients and wrap. I started with lettuce, cucumber, crab, carrots, cabbage, ginger then avocado. Serve immediately with dipping sauce. I would definitely use more crab meat the next time. Very good!
