PREPARATION MODE
1. Beat the dough ingredients in the blender, finally the flour and baking powder

3. Combine the filling ingredients (the basics plus the chosen complement) in a bowl, mix and add salt if necessary.
4. Grease a medium pyrex (about 25 cm in diameter and high) with a little margarine and spread some flour on top (knock the sides of the pyrex to spread the flour better)
5. Pour half of the reserved dough into the pyrex, spread the stuffing well on top and cover with the rest of the dough.
6. Tip: you can put about 2 tablespoons of grated cheese on top, without mixing
7. Bake in a medium oven (210°C) for about 50 minutes, or until golden.

Ingredients:
2 medium eggplants
2 cups cooked rice (white or brown)
½ cup chopped tomatoes (I used cherry tomatoes)
½ pot of plain yogurt
1 medium onion chopped
2 minced garlic cloves
chopped chives
Olive oil
cheese to finish
Pepper
salt.
Way of doing:
Cut the eggplants lengthwise, keeping the stem.
Using a spoon remove all the pulp and set aside.
Sprinkle some salt on the inside of the eggplants, spread them out and place them cavity-side down on a baking sheet lined with two layers of paper towels.
Leave them like that for 20 minutes.
Place the eggplant pulp on the cutting board and roughly chop. Season with salt, place the pulp on a sieve and let it rest for 20 minutes.
Heat a frying pan with a generous drizzle of oil, add the onion and sauté until it starts to become translucent.
Squeeze the chopped eggplant to expel excess liquids and place it in the frying pan, sauté for a few minutes and then add the rice and garlic.
Continue sautéing to combine the ingredients and flavors, add the chopped tomato and chives and sauté for another minute.
Turn off the heat, add the yogurt, mix and adjust the salt. Finish with pepper.
Put the stuffing inside the eggplants pressing down with a spoon.
Drizzle with a drizzle of oil.
Place the eggplants in a shape, cover with aluminum foil and bake for approximately 30 minutes at 200C.
Remove the foil, sprinkle the cheese and bake for a few minutes, enough to melt the cheese.

1 Japanese cucumber, cut into strips
1 boiled carrot, cut into strips
cream cheese to taste.
Preparation mode
In a container, place the flour, oil, salt, water and mix well until it forms a dough.
Transfer to a smooth surface, dusted with flour and knead the dough for 5 minutes.
Separate the dough into 3 equal parts.
Open each part with a rolling pin and leave it very thin.
Cut the dough into discs (you can use a medium round bowl to measure).
Heat a skillet and bake the discs of dough until bubbles form. Turn over, and bake the other side (be careful not to dry the dough).
Stuff the disks with lettuce leaves, cucumber strips, carrots and cream cheese.
Gently roll up the dough and serve. Enjoy your food.
