Our mates at Feral Brewing have been kind enough to invite us to help launch their latest release: Dark Matter - a limited Winter release - literally tomorrow the 14th May Friday night at Laika in Laithlain.

They've infused it with Dutch cocoa, Madagascan vanilla pods and Mexican coffee, roasted locally by our mates at Laika. The result is a dessert style porter oozing big coffee, chocolate and vanilla flavour with a hint of lactose.
Can confirm is delicious π€€
Gonna be ripping night - beer selection on by Feral, including the new kid on the block.
We'll be slinging Burgs from 5pm till sold out, we're bringing around 150 so should keep you fed through till 8-9pm depending on how hungry you are. π

To crank things up a notch if you're a madman, we created a Hot Sauce Special just for the thrill seekers out there for tomorrow! It's called the Dark Matter Death Sauce. π
It's made from heaps of delicious fresh superhot chilli's (yes there's Carolina Reapers in there π) but most importantly finishing touches of Laika Coffee and Feral Dark Matter. It's ridiculously hot, so will only be served with the FU as an option.
It's bright and fruity but finishes with notes of dark malt and hops with subtle roasted coffee. Yes it's weird, but we think it's kinda great and it'll also set your mouth on fire π₯

We will be hanging out in the big yellow food van to try and keep you fed for a huge 10 hours of local music!

TACO NIGHT THURSDAY!
We're doing a cheeky little Pop-up tomorrow night Thursday 8th April with
Innaloo Sportsman's Club from 4:30pm till sold out! π
While you wait for food from Don we'll be busting our guts trying to sell the whole line some Hot Chicken tacos snax before Don crushes your hunger with the big Birria Tacos (2nd photo).
So that way if you find yourself waiting in line with a ridiculous hunger, you should get two feeds! Hot Chicken tacos and Beef Birria tacos.
They'll be HEAPS of tacos (over 200) and hopefully we can get through the line at least once. π
Due to the speed of service there will be only medium heat available. BUT you can add some FU Hot Magic Dust yourself if your feeling CRAZY π€―
We're working to make the experience better for everyone, we hate queues but they're a necessary evil unfortunately, so we help it be more enjoyable with craft beers available, line tacos delivered directly to you, and live music! π

Inspired by the Charlie Chaplin c**ktail - they've taken a sour ale base and ramped up the complexity - with the addition of apricot, juniper berries, blood plum, yuzu and cinnamon. The result is a tart, moreish beer layered with fruity and botanical flavours! π€―π€€
Seriously sounds amazing for the weekend forecast. π

A lot has happened during our residency at North Bird Wine bar.
We were just assuming we'd sling some burgies and vibes and get out but COVID had other ideas.
But we got through it fam. π
We've had the opportunity to feed some 400 odd of you.
These pop-ups in different kitchens are easy, but we love bringing them to you because hopefully they are more enjoyable for you than sitting on a kerb in a carpark in Belmont or hanging outside a dodgy Warehouse in Bayswater. (We love both those spots tho π)
But we know they're not for everyone.
So we keep our options open for new and interesting pop-up locations to cater for all of you differently!

We had a different idea about how our 4 weeks at North Bird Restaurant, Wine Store and Bar would go, but the vibes have been immaculate the whole way through ππ
We started strong first week but lockdown being announced an hour before your service week two is an unusual motivator. You guys just kept showing up π
Last week you organised into sessions nicely and wore you mask and we had our biggest service yet in pretty gross weather.
This week we're planning for a big one. π
Touch wood.... Sunday should be mask free and a bigger capacity than last week. The sun will be shining, and we are giving our Maryland's another run, twice as many this time!
We will chat as news comes in about restrictions, but we'll be slinging our Sandos no matter what!

Hope everyone is well. What a weird week that was. π€―
Our thoughts go out to everyone that's been affected by the bushfires and the lockdown. It's been a really crazy week.
WA has reported no new community cases of COVID Today so as of 6pm we're somewhat free again.
This Sunday the 7th we will be running our 3rd takeover of the kitchen at from 1:30pm. We will have 4 or 5 sessions depending on demand, to try and cater for the existing ticket holders but still have space for walk-ins and comply with the new reduction of capacity due to the 4sqm rule.
Please check your emails if you've purchased a ticket. π
So if you show up without a ticket and there's a table spare you're free to go in. If you show up without a ticket and the tables are all full, you just wait until a table is free or the session ends. Whichever is sooner.
Sessions run for an hour but we have had lots of people coming for a burger and one drink and leaving so tables should turn over quickly. π»
We know it's not ideal but we're trying to keep the wheels turning and get some fried chicken out to you, but still doing so safely.
I can imagine after a week like this one a few drink and some fried chicken could be the perfect tonic to finish off the weekend.
Remember to use your SafeWA App and wear your mask. We have be very lucky to have the government allow us to let customers take their mask off while they're eating and drinking. ππ

As much as I rebel against these "my best moments of this year" posts. I can't think of another way to convey my appreciation for you support.
In a year when an industry I love so dearly - the hospitality industry, got completely disrupted, we somehow built up our business and gained support.
Your support and generosity has been amazing. Otherwise it'd just be me in a carpark, or bar, or backyard or sportclub cooking for no-one. π
It's been crazy to see some of the turnouts this year. Carpark Party was a huge highlight, but just as satisfying was our first solo gig at . Not quite as satisfying as those first few frantic caravan cooks with
but very close. π
I feel like our recent pop-up at was the beginning of something fun and we are already in talks with lots of different venues to popup or Collab with in 2021. π
We might even do a festival or two if we're feeling crazy. π
So for those venues we traded in this year, THANK YOU! You own or run something very valuable, much more valuable that anything we have access to, so for you to share it with us allowing us to run our business, has been amazing. We seriously can't thank you enough. π
We had plenty of love from legends from breweries all over WA but one in particular has helped literally whenever we asked and sometimes just plain offered to help thank you. Your beers keep us moist, your love makes us moister and I even got a free hat right before the 2020 cutoff thanks π you made it π
Can't wait to do more food and drink pop-ups in 2021.
Our suppliers have been amazing this year, getting chicken, buns, pickles, spices, service containers etc has been tricky to say the least. You know who you are. Thanks so much.

There's a lot of discussion around the best chicken burgers and what's the best cut of meat to use, or what everyone's favourite cut is to eat.
Breast vs Thigh: The ultimate battle! π
After lots of "testing" (reading scoffing our face) over a year ago, we decided we prefer BREAST for our Nashville Hot Chicken.π₯
And that's not us saying we hate thigh, it just means we prefer breast in this particular product. Nashville Hot Chicken by design is a strong, spicy, rich and full flavoured affair and we think a big lean JUICY refreshing slab of breast is better than a rich fattier thigh. But that's just us. π
During our testing we found a surprising number of people that only eat breast, they don't like the taste of thigh. We do, but we can understand it. Thigh is a richer, stronger tasting meat than breast is.
One thing that frequently comes up in the discussion over breast vs thigh is moisture. "OH THIGH IS SO MOIST"
Well guess what breast can be too, it's just harder to hit consistently and less forgiving than thigh.
We've all had a bone dry breast out and about in P-Town that's for sure. And if it's hard to work out what cut it is, and it's dry, odds on its a breast piece.
But it doesn't have to be dry.
And we like a challenge.
So here is a photo of one of the 140-ish burgs from last night at Innaloo. Almost a sellout ππ
This one was unloved sitting around for about 10 minutes in a mini-lul after we'd sold about 95 burgs flatout.
Myself and burger constructor extraordinaire were peckish and had half each to save it from the trash can.
The bright fluoros made the moisture glisten hard, so hard it was tricky to take a photo of it π
We're just glad you keep showing up and ordering them. And for that we're super grateful ππππ

Well Thursdays service was crazy! 2 to go Innaloo!
Sold out again, blew past the previous max easily. 125 Chicken, 10 fish in the end. Service was steady this time, still can't believe there's demand for over a hundred of our Burgs in amongst the literal hundreds of kilos of BBQ. HOW DO YOU HAVE ROOM?! π
Regardless we are so grateful it's been a crazy ride so far... We seriously can't thank you enough for the support!
