This morning I am starting my day early, shorty before six, with one of my favourite , a homage to one of my greatest inspirations, chef , with my twist on the pie

I really enjoyed baking this order:

*Creamy chicken, leek, mushrooms, tarragon pies
*Smoked salmon, potato, leek pie
*Comté Dauphinoise potatoes pie

It made me feel like I am doing something nice.

Beautifully messy lammb shank pie.

This dark beauty of a tart was the star of last Saturday's Community Market in Los Barriles, BCS.
It featured our 100% butter crust and a base of ash goat cheese and ricotta topped with roasted beets, garlic, onion and sesame.
A few nuts here and there, tiny cookies, fresh thyme & parsley and a drizzle of excellent honey finished it off.
Look for it in our future menus.

Sweet pies, deep dish, 9", yeld 6 slices, $700 ~ 800

🎄 Extra thick, dense and sticky, no Karo syrup, Bourbon chocolate pecan pie and dulce de leche

🌲Mincemeat (the original recipe with actual meat in it) pie with a shot of jolly good booze
🌲Super festive and tropical banana and coconut salted caramel tart,

All pies are 9 inches across and around 2 inches thick. They yelds 6 slices and retail for $700 pesos (almond/raspberry $750; pecan $800).
The banana tart retails for $700, it is 10 and 1/2 inches across and half inch deep.
