I wanted to share this story as I feel it’s a big part of Tinman BBQ and a story with the logo design that I have.
I’ve been very inactive on here due to some personal issues, and most recently because my Grandma’s health. She was in the hospital only to come home in hospice care, where she passed away yesterday. My Grandma came here from Denmark over 60 years ago and lived an unbelievable life. If you’ve ever looked at my logo, I have the Denmark flag where the heart is. One reason being because it’s a representation of my open heart surgery (hence the Tinman nickname), and more importantly the Denmark flag for a representation of my Mom’s side of the family.
I didn’t learn bbqing from my Grandma, but I learned how far love can go in your food, and what it means to take care of people. Sometimes a meal can mean everything to someone and thus I think it’s important to always put love into cooking, the most important ingredient.
Thank you Grandma for helping me get to where I am in my life, thank you for your love, and thank you for always believing in me and my dreams. You’ll be missed, but your legacy will always live on in my cooking.

Wanted to make a separate post before posting a big one, but wanted to apologize for a lack of updates. Had some health issues but I'm getting back to 100%. All good and really looking forward to the next few months! Summer time!
Brisket has been the number one thing I’ve wanted to cook, but it takes such a long time. But all good things in life require work. We wanted to do something this weekend that was Irish, so my managers, Kate, Sam and myself brainstormed the idea of a Guinness Brisket Shepherd’s Pie. I wanted to differentiate from our traditional pie, so this one is with brisket, mushrooms and onions in a Guinness gravy, topped with our mashed potatoes and Parmesan cheese. 10 hours from start to finish, I have an awesome dish that I think is going to do really well this weekend.

Guinness Brisket Pie made with House-smoked Brisket, onions, and mushrooms in a house-made Guinness gravy with mashed potatoes garnished with Parmesan cheese, served with Irish brown bread 😍

So with the holiday weekend, we had to whip out two specials. Crab dip with cream cheese, cheddar, crab, and old bay served with fried pita chips. Also one that I hold in my heart, my grandma used to make trifles all the time, so this is a smoked Guinness chocolate cake trifle; smoked Guinness chocolate cake, peanut butter whipped cream with skrewball whiskey, chocolate peanut butter pudding and topped with Reese’s. Super excited for these dishes.
Doing Mardi Gras at the restaurant this weekend. Smoked Shrimp Po’Boy: Smoked shrimp tossed in a Cajun Mayo, with fries. Then red beans and rice with andouille sausage. Fun fact, it took me over a week after my heart surgery to have an actual meal, which ended up being red beans and rice that my lovely sister brought to me. Think you guys are really going to like these.

Sitting here cooking my bbq meatballs for the weekend here at the restaurant, thought to myself, is there really ever “bad weather” for smoking? Cold weather, warm weather, hot weather, honestly never a bad time to do some outdoor smoking!

Sorry for not much of a heads up on this one, but really cool to be able to do a French dip sandwich! Pretty traditional, just smoked, with some amazing au jus. Thank you as always to Sam for the awesome pictures, but this time shoutout to the hand modeling of Michael Doran! Such a good photo there!
