HEALTHY DRINK SWAPS 🥤

If you’re anything like me, you know how hard it is to resist unhealthy drinks like Coca-Cola, Pepsi & ginger ale.

That was until I found HEALTHIER alternatives that taste even better (IMO) 🙌🏼

What’s better than pumpkin muffins?!

Healthi-errr Vegan Pumpkin Muffins 🎃 🍁 (also gluten free!) SAVE TO TRY LATER 🔖

Ingredients:
🍁 1 3/4 cup gluten free all purpose flour (I used the brand Bob’s Red Mill)
🍁 1 1/2 tsp baking soda
🍁 1 1/2 tsp cinnamon (I used Ceylon cinnamon for added benefits)
🍁 1/2 tsp ground ginger
🍁 1/4 tsp ground nutmeg
🍁 1/2 tsp salt (I used pink Himalayan)
🍁 1 (15oz) can of pumpkin purée
🍁 3/4 cup sugar (I used monk fruit, but you could also use stevia or regular sugar)
🍁 1/3 cup coconut sugar (could also use brown sugar instead - I like coconut sugar bc it’s easier for our bodies to break down)
🍁 1/2 cup applesauce
🍁 1/2 cup coconut oil (melted)
🍁 2 tsp vanilla extract

For cream cheese swirl:
🍁 7-8 oz vegan cream cheese (I used the vio life brand but any works!)
🍁 1/4 cup sugar (I used monk fruit)
🍁 1 tap vanilla extract



Directions:
1. Preheat the oven to 350 degrees
2. In small bowl, whisk together flour, baking soda, spices and salt.
3. In a large bowl combine pumpkin purée with both sugars, mixing to combine. Add apple sauce, oil & vanilla extract & stir until smooth.
4. Fold dry ingredients into wet ingredients.
5. In a separate bowl combine all cream cheese ingredients until smooth.
6. Fill muffin molds 2/3 of the way full with muffin mixture. Add about 1 tbsp of cream cheese on top - swirl with tooth pick to combine.
7. Bake for 20 minutes. Remove from oven and let cool in pan for another 10 minutes before removing.
8. ENJOY! :)

Ever wanted to try something new but have no idea where to start?

This was me 3 years ago.

Trying to get back in shape after college & having no idea what to do, how to do it or who to ask. Has anyone else been there???

I tried doing cardio 60 mins a day - it worked, but I felt like s**t.

I tried fad diets - they worked, but completely messed up my relationship with food.

& then I found what I now call mindful movement.

Moving my body in ways that FEEL right for me.

& for me that was Pilates.

When I started seeing results and feeling better in my OWN body, I knew there had to be something more.

I wanted to do MORE. Because I felt like I unlocked the key for me… so could this also be the key for someone else?

I went out and became CERTIFIED as a Pilates Instructor. & let me tell you - what I have learned has CHANGED MY LIFE!

If you’re looking to make a change, but have no idea where to begin - start with simple mindful movement. Workouts that lengthen and strengthen your muscles.

Pilates to me is a way I can challenge myself while also sculpting and toning my muscles through lower impact & strengthening movements.

But if you are like me, trying to get back in shape, & have no idea where to start… start with YouTube videos! 🎥

At home workouts are an amazing way to get back into the swing of things and learn what you like or don’t like.

It’s truly a mindset. We can decide to allow our fear of judgement hold us back or we can EMBRACE IT.

I can’t believe I’m about to say this, but…

My name is Abby and I’m in love with short and effective workouts.

Yep - you heard me right.

I used to spend an hour at the gym (AT LEAST- sometimes 1.5-2 hours) until I realized it only made me dread my workouts more.

& I wasn’t seeing the results I wanted.

Until I started incorporating shorter, more effective workouts into my routine.

Would you believe me if I said I now only workout for about 30 minutes a day? (With the occasional longer workout here and there)

The truth is, you don’t have to slave away at the gym to see results.

Quicker workouts can be JUST AS if not MORE EFFECTIVE - if structured correctly.

A huge goal of mine for my YouTube channel is to make working out FUN again & a ~functional~ part of everyone’s day.

That being said - my brand new 5 minute workout is live on my YouTube channel.
